Ingredients
For Mushroom and Onion Soup
2 tsp oil
1 tbsp finely chopped garlic (lehsun)
1 cup finely chopped onion
3 cups chopped mushrooms (khumbh)
1 tbsp whole wheat flour (gehun ka atta)
salt and pepper to taste

To make mushroom onion soup, in a deep bowl take 3 cups of hot water.

Add 2 stock cubes, mix well and keep aside.

To make mushroom onion soup, in a deep bowl take 3 cups of hot water.

Heat 1 tsp oil in a broad pan.

Add 1 tbsp finely chopped garlic (lehsun).

Sauté for few seconds.

Add 1 cup finely chopped onions.

Sauté on medium flame for 2 minutes.

Add 3 cups chopped mushrooms (khumbh).

Cook on medium flame for 3 to 4 minutes, while stirring occasionally.

Remove a little mixture in a bowl and cool completely.

Transfer it into a mixer jar.

Add ¼ cup of water.

Blend it to a smooth puree.

Heat 1 tsp oil in a deep kadhai.

Add 1 tbsp whole wheat flour (gehun ka atta).

Sauté for few seconds.

Add the prepared puree.

Add the remaining sautéed mixture.

Add veg stock.
-
Add salt to taste.

Add pepper to taste.

Mix well and cook on medium flame for 5 minutes, while stirring occasionally.

Serve mushroom onion soup hot.

Heat 1 tsp oil in a broad pan.

Adding vegetable stock to the soup gives a richer taste and flavour.

Instead of whole wheat flour you can add oats flour slurry to thicken the soup.

Thiiiss soup was jusst toooo good!!! People who love mushrooms are sure to love it..The only flavoring was from the onions and black pepper which was so simple and subtle..Plus making in microwave is much easier...Too good..I avoided the cream though!!it still tastes good without the cream..
