Ingredients
For Dudhi Soup
2 cups peeled and roughly chopped bottle gourd (doodhi / lauki)
1/2 cup finely chopped mixed vegetables
freshly ground black pepper (kalimirch) powder to taste
1/8 tsp salt or as advised by doctor / dietitian
1 tbsp lemon juice
For The Garnish
1 tbsp finely chopped coriander (dhania)
Method
For dudhi soup
- To make dudhi soup, combine chopped bottle gourd along with 1 cup water in a pressure cooker and pressure cook on a medium flame for 2 whistles.
- Allow the steam to escape and then open the lid, cool the mixture and blend till smooth. Do not strain it.
- Transfer the mixture to a broad pan and add the vegetables along with 1 cup water and pepper powder.
- Mix well and cook on a medium flame for 3 to 4 minutes or until the vegetables are completely cooked, while stirring occasionally.
- Remove from the flame, just before serving, pour equal quantities of the soup into 4 individual bowls.
- Add some salt and lemon juice and mix well.
- Serve dudhi soup immediately garnished with coriander.
