To make sprouts toast, combine all the ingredients in a deep bowl and mash lightly using the back of a spoon. Divide the mixture into 8 equal portions and keep aside. Cut each whole wheat bread slice into a round of 50 mm. (2”) using a cookie cutter. Apply ¼ tsp of butter on each bread roundel, arrange them on a baking tray with the buttered side facing upwards and bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes or till crisp. Place a toasted bread roundel on a clean, flat surface, put a small piece of lettuce, a portion of the stuffing and 1 tbsp of carrots evenly over it. Repeat step 3 to make 7 more open toasts. Serve immediately.
The mixed sprouts toast looks very appealing with its dainty disc-like shape and appetizing toppings. Mixed sprouts perked up with chaat masala and other spice powders emerges as a real chatpata topping for whole wheat bread. To make it a tad healthier, try multigrain bread.
Healthy Indian sprouts toast is a wiser pick than cheese laden sandwiches made with white bread. The abundance of protein, fibre, vitamins and antioxidants from sprouts makes it all the more desirable. We have used a small quantity of butter to get the necessary crispiness when baked. Also bread has some carbs, so do not go overboard with these toasts. Moderation is the key here too!
Tips for sprouts toast. 1. You can use of almond bread to make sprouts toast and avoid making roundels. 2. Check if your mixed sprouts are cooked while being boiled for 5 to 7 minutes. 3. If you are using roundels then you need only 4 tbsp grated carrot but if you are using whole toast then use 8 tbsp grated carrot.

Ingredients
For The Mixed Sprouts Topping
1 cup boiled mixed sprouts (moong , matki , chana etc.)
1 tsp chilli powder
1 tsp chaat masala
1 tsp cumin seeds (jeera) powder
1 1/2 tsp lemon juice
salt to taste
Other Ingredients For Sprouts Toast
8 whole wheat bread slices
2 tsp butter for brushing
2 iceberg lettuce leaves , torn into pieces
4 tbsp grated carrot
Method
- Combine all the ingredients in a deep bowl and mash lightly using the back of a spoon.
- Divide the mixture into 8 equal portions and keep aside.
- To make the sprouts toast, cut each whole wheat bread slice into a round of 50 mm. (2”) using a cookie cutter.
- Apply ¼ tsp of butter on each bread roundel, arrange them on a baking tray with the buttered side facing upwards and bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes or till crisp.
- Place a toasted bread roundel on a clean, flat surface, put a small piece of lettuce, a portion of the stuffing and 1 tbsp of carrots evenly over it.
- Repeat step 3 to make 7 more toasts.
- Serve the sprouts toast immediately.

This is what mixed sprouts look like.

Heat water in a pan and bring to boiling point.

Add the mixed sprouts. We buy the ready made mixed sprouts from our local market in Mumbai. You can get this anywhere in India.

Add 1/4 tsp salt.

Check if your mixed sprouts are cooked while being boiled for 5 to 7 minutes. Do this by taking a laddle and removing a little bit of the mixed sprouts from the pan. Eat the chana or some sprouts to see if they are cooked properly. If undercooked, then boil a bit more and test again.

Let it boil for 5 to 7 minutes.

Drain your mixed sprouts using a sieve.

Keep aside in a bowl.

Place each round bread slice on a board.

Apply ¼ tsp of butter on each bread roundel.

Grease a baking tray with butter.

Arrange bread roundels on a baking tray with the buttered side facing upwards.

Bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes or till crisp.

Place toasted bread roundel on a clean, flat surface, put a small piece of lettuce on each roundel.

Top with 1/8th of the topping.

Add 1/2 tbsp of carrots evenly over each toasted roundel.

Serve immediately.
