Schezwan noodles recipe | easy Indian style Schezuan noodles | Chinese veg Schezwan noodles is a dish which is self-sufficient in flavours and can be had as a One Dish Meal. Learn how to make easy Indian style Schezuan noodles.

To make Schezwan noodles, heat the oil in a wok/kadhai on a high flame, add the garlic and sauté on a medium flame for 30 seconds. Add the cabbage, capsicum, carrots, bean sprouts and salt, mix well and sauté on a medium flame for 3 to 4 minutes, while stirring occasionally. Add the noodles, Schezuan sauce, toss well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. Add the chilli oil, toss well and cook for another 1 to 2 minutes. Serve immediately.

Schezuan Sauce, made with fiery spices and condiments, holds an indispensable place in Chinese cuisine. The Chinese veg Schezwan noodles, as the name suggests, is an authentic Chinese preparation of Hakka noodles with sautéed veggies and this pungent sauce.

Indeed, the Schezwan noodles, prepared with homemade chilli oil, is sure to be everyones all-time favourite recipe. It is a class apart from noodles made only with Schezuan sauce.

While you can throw any vegetables into this dish, it tastes much better when prepared with veggies like carrot, cabbage, celery and capsicum, which are typically used in Oriental cooking. Long and crunchy bean sprouts are also essential to enhance the authenticity of this easy Indian style Schezuan noodles.

For the chilli oil
  1. Heat the oil in a deep pan on a high flame till it smokes.
  2. Add the chillies, cover with a lid immediately and remove from the flame.
  3. Strain it using a sieve and keep aside.
For the noodles
  1. To make the schezwan noodles, heat the oil in a wok/kadhai on a high flame, add the garlic and sauté on a medium flame for 30 seconds.
  2. Add the cabbage, capsicum, carrots, bean sprouts and salt, mix well and sauté on a medium flame for 3 to 4 minutes, while stirring occasionally.
  3. Add the noodles, schezuan sauce, toss well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  4. Add the chilli oil, toss well and cook for another 1 to 2 minutes.
  5. Serve the schezwan noodles immediately.
Handy tip:
  1. Store the remaining chilli oil in a glass bottle and use as required.

what is Schezuan noodles made of?

 

    1. To make Chilli Oil is made from 1/2 cup oil and 7 to 8 whole dry kashmiri red chilliesSee below image of list of ingredients for schezwan noodles.
    2. To make Schezuan Noodles is made from 3 tbsp oil, 1 tbsp chopped garlic (lehsun), 3/4 cup shredded cabbage, 3/4 cup thinly sliced capsicum, 1/2 cup thinly sliced carrots, 1/2 cup bean sprouts, salt to taste, 2 cups boiled noodles, 1/2 cup schezuan sauce and 1 tbsp chilli oil. See below image of list of ingredients for schezwan noodles.

    1. Heat 1/2 cup oil in a deep pan on a high flame till it smokes.
    2. Add 7 to 8 whole dry kashmiri red chillies, broken into pieces. 
    3. Cover with a lid immediately and remove from the flame.
    4. Strain it using a sieve and keep aside. 
       
how to boil noodles

 

    1. To boil noodles, boil enough water in a deep pan. Add salt to taste and oil.
    2. Add the hakka noddles and mix well. We have taken 1 ½  packet of hakka noodles. Per packet of hakka noodles is approx. 150 gms.
    3. Boil the hakka noodles for 8  minutes or till they are 70-80% cooked. Do not overcook or else they will turn soggy. Drain them using a strainer.
    4. Refresh them under cold water so they do not stick to each other and the internal cooking process stops. Keep aside to cool. You can also drizzle oil to avoid noodles from sticking to each other.

    1. For making the schezwan sauce at home, we will first make a chilli-garlic paste. For that, boil 1 cup of water in a deep non-stick pan.
    2. Add 20 whole dry kashmiri red chillies. We have made use of Kashmiri red chillies which provides a fiery red colour and mild heat but, you can use any other variety or a combination of 1-2 red chillies depending upon the spice level you can handle. Also, we have not removed the seeds of the chillies but if you want a more smooth schezwan sauce and less spicier, you can remove the seeds of the chillies before putting them in water.
    3. Add 1/4 cup chopped garlic (lehsun). Peel and roughly chop them before adding.

    1. To make Schezwan noodles recipe | easy Indian style Schezuan noodles | Chinese veg Schezwan noodles, take 3 tbsp oil in a broad non-stick pan. 
    2. Add 1 tbsp finely chopped garlic (lehsun). This gives a great taste and always use chopped. 
    3. Sauté on a medium flame for 30 seconds.
    4. Add 3/4 cup shredded cabbage. It should be very thinly shredded. 
    5. Add 3/4 cup thinly sliced capsicum
    6. Add 1/2 cup thinly sliced carrots
    7. Add 1/2 cup bean sprouts
    8. Add salt to taste. 
    9. Mix well and sauté on a medium flame for 3 to 4 minutes, while stirring occasionally.
    10. Add 2 cups boiled noodles
    11. Add 1/2 cup schezuan sauce
    12. Toss well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
    13. Add 1 tbsp chilli oil
    14. Toss well and cook for another 1 to 2 minutes.

Fast and easy to make. Noodles taste great with Schezuan sauce, chilli oil and blend well with carrot, capsicum strips and bean sprouts.

Noodles are my favourite and schezuan noodles is on the top.. Although the colour is not so dark compared to the restaurants but it is definitely because they add a drop of colour which we don't.. but trust me the taste is soo much same.. You will just love it..
