Necessity is indeed the mother of all inventions. The same is with powdered soya chunks. When I was experimenting with some new recipes, we ran out of soya granules and did not know what to do! So, I ground some soya chunks to make soya chunks powder. Then we used them in the recipe of Corn Soya Koftas in Malwani Gravy and it turned out to be awesome.

Powdered soy nuggets are considered to be one of the best sources of protein. It also abounds in calcium and these 2 nutrients together work towards strengthening your bones.

Soy chunks powder has great water soaking capacity. It soaks up water and increases the bulk of any recipe. Thuspowdered soy nuggets used as a binding agent, especially useful for making stuffing for Parathas like in Dal and Soya Parathas .

Mixing soya chunks powder with plain water and consuming it as a drink may not be the best option though. This reason is the same. It will soak all the water and turn into a paste rather than a protein drink.

You can make soya chunks powder in bulk and store them in an air-tight container and use as required.

For powdered soya chunks

  1. To make powdered soya chunks | soya chunks powder | soy chunks powder | powdered soy nuggets, first select good quality soya chunks. Whether purchasing, make sure that there is no evidence of moisture or insect damage, and that the nuggets are whole and not powdery.
  2. Place about 1 cup of soya chunks in a mixer jar.

  1. Mixing soya chunks powder with water or milk might not yield a uniformly mixed drink. Moreover soya chunks powder might keep on soaking water within short span of time. Would not suggest this option.

Soya Bhurji using soya granules

  1. Apart from using powdered soya chunks, you can also experiment with other soya products like soya granules. You can make recipes with it like soya bhurji. See detailed recipe of soya bhurji.

    For Soya Bhurji
    1 1/2 cups soaked soy granules
    2 tsp oil
    1/4 cup finely chopped onions
    1 tsp garlic (lehsun) paste
    1/2 cup finely chopped tomatoes
    1/2 tsp turmeric powder (haldi)
    1 tsp chilli powder
    1/2 tsp garam masala
    salt to taste
    1/4 cup boiled green peas
    2 tsp lemon juice

    Method
    For soya bhurji
     
    1. To make soya bhurji, heat the oil in a deep non-stick pan, add onions and garlic paste and sauté on a medium flame for 1 to 2 minutes.
    2. Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
    3. Add the turmeric powder, chilli powder and garam masala, mix well and cook on a medium flame for 1 minute while stirring continuously. To prevent the masalas from burning, you can also add 1 tbsp of water while cooking.
    4. Add the soya granules, green peas and salt, mix well and cook for another 2 minutes, while stirring occasionally.
    5. Switch off the flame, add lemon juice and mix well.
    6. Serve soya matar bhurji immediately.
     

Soya and Vegetable Pulao

  1. Apart from using powdered soya chunks, you can also experiment with other soya products like soya granules. You can make recipes with it like soya and vegetable pulao. See detailed recipe of soya and vegetable pulao. For soya and vegetable pulao

    Ingredients
    1/4 cup soya granules
    1/4 cup rice (chawal) , washed and drained
    finely chopped carrot
    1/4 cup green peas
    1 tsp ghee
    1/2 tsp cumin seeds (jeera)
    1 small stick of cinnamon (dalchini)
    cardamom (elaichi)
    a pinch of asafoetida (hing)
    1/4 cup chopped onions
    1/4 tsp turmeric powder (haldi)
    1 tsp coriander-cumin seeds (dhania-jeera) powder
    salt to taste

    For Serving
    fresh low-fat curd

    Method
    1. Combine the soya granules along with ¾ cup of water in a deep non-stick pan, mix well and cook on a medium flame for 1 to 2 minutes or till they are soft, while stirring occasionally. Keep aside.
    2. Heat the ghee in a pressure cooker and add the cumin seeds.
    3. When the seeds crackle, add the cinnamon, cardamom, asafoetida and onions and sauté on a medium flame for 1 minute.
    4. Add the carrots, peas, rice, cooked soya granules, turmeric powder, coriander-cumin seeds powder, salt and 1 cup of water, mix well and pressure cook for 3 whistles.
    5. Allow the steam to escape before opening the lid.
    6. Serve immediately with low-fat curds.
     

Soya Methi Masala

    Ingredients

    1/2 cup soya granules
    1 1/2 cups chopped fenugreek (methi) leaves
    2 tsp oil
    1 tsp cumin seeds (jeera)
    1/2 cup chopped onions
    1 tsp green chilli paste
    1/2 tsp turmeric powder (haldi)
    1/2 tsp chilli powder
    1/2 tsp garam masala
    salt to taste
    1/2 cup boiled green peas
    2 tbsp low-fat milk , 99.7% fat-free

    Method
    1. Boil 2 cups of water in a deep non-stick pan and switch off the flame.
    2. Add the soya granules and keep aside for 5 minutes. Drain and squeeze out the excess water and keep aside.
    3. Heat the oil in a non-stick kadhai and add the cumin seeds.
    4. When the seeds crackle, add the onions and green chilli paste and sauté on a medium flame for 2 minutes.
    5. Add the fenugreek leaves and soya granules and sauté on a medium flame for 1 to 2 minutes.
    6. Add the turmeric powder, chilli powder, garam masala, salt and 1 tbsp of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
    7. Add the green peas and milk, mix well and cook on a medium flame for 1 more minute, while stirring occasionally.
    8. Serve immediately.

there is a lot of debates going on consuming raw soya beans/flour/chunks saying its not safe as it have toxins which might cause digestive problems. So soya should me soaked in water and cooked. what are your insights?

Tarla Dalal    Soya chunks are already processed. So you can eat them raw with milk if you like the taste.
