Ingredients
For Vegetable Kalvan
2 cups chopped and boiled mixed vegetables
1½ tbsp oil
1 tsp cumin seeds (jeera)
6 to 8 curry leaves (kadi patta)
1/2 tsp turmeric powder (haldi)
1 tbsp onion garlic masala powder
1 tbsp coriander-cumin seeds (dhania-jeera) powder
1 soaked dry Kashmiri red chilli
1 cup sliced onions
1 tbsp chopped garlic (lehsun)
1 tbsp chopped ginger (adrak)
2 tbsp grated dry coconut (kopra)
1 cup chopped tomato ,deseeded
salt to taste
For The Garnish
2 tbsp finely chopped coriander
Method
- To make vegetable kalvan recipe, heat ½ tbsp oil in a deep non-stick pan, add the soaked chilli, onions, garlic, ginger and saute on a medium flame for 2 to 3 minutes.
- Add the tomatoes and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Remove on a plate and cool the mixture completely. Transfer it into a mixer jar along with ¼ cup water.
- Blend into a smooth paste and keep aside.
- Heat 1 tbsp oil in a deep non-stick pan, add cumin seeds, curry leaves, turmeric powder, kanda lasun masala and coriander cumin seed powder.
- Mix well. Add the prepared masala paste, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the boiled mixed vegetables, salt to taste and 1 cup hot water.
- Mix well and cook on a medium flame for 5 to 8 minutes, while stirring occasionally.
- Serve the vegetable kalvan hot garnished with coriander.
