Method
  1. To make vegetable kalvan recipe, heat ½ tbsp oil in a deep non-stick pan, add the soaked chilli, onions, garlic, ginger and saute on a medium flame for 2 to 3 minutes.
  2. Add the tomatoes and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  3. Remove on a plate and cool the mixture completely. Transfer it into a mixer jar along with ¼ cup water.
  4. Blend into a smooth paste and keep aside.
  5. Heat 1 tbsp oil in a deep non-stick pan, add cumin seeds, curry leaves, turmeric powder, kanda lasun masala and coriander cumin seed powder.
  6. Mix well. Add the prepared masala paste, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  7. Add the boiled mixed vegetables, salt to taste and 1 cup hot water.
  8. Mix well and cook on a medium flame for 5 to 8 minutes, while stirring occasionally.
  9. Serve the vegetable kalvan hot garnished with coriander.
