Ingredients
Main Ingredients
2 cups tofu (bean curd/ soya paneer) cubes (bean curd/ soya paneer) cubes or
2 cups fresh mushrooms (khumb) , sliced
1/2 cup sliced onions
3/4 cup sliced tomatoes
1 stalk celery (ajmoda) , thinly sliced
salt to taste
Method
- Heat the oil in a broad non-stick pan, add the paneer or tofu and saute on a medium flame for 3 to 4 minutes or till they turn light brown in colour.
- Just before serving, toss all the ingredients together.

The diabetic soups look delicious, and I plan to try doing one maybe this week, weekend, or next. May I add that the fat and cheese are not a problem for people with high sugar, too many carbs, processed foods, trans fats, refined sugars, artificial sweeteners (aspertame, maltodextrin, etc.), and nitrates from processed meats are the real culprits. The fats, overall, are not bad for diabetics! Thanks for sharing.
