Ingredients

For Buckwheat Khichdi
1 cup buckwheat (kuttu or kutti no daro)
1/2 cup curd (dahi)
1 tbsp oil
1 tsp cumin seeds (jeera)
1/2 cup raw potato cubes
1 tbsp ginger-green chilli paste
rock salt (sendha namak) or table salt to taste
2 tbsp roasted and coarsely powdered peanuts
1/2 tsp lemon juice

For The Garnish
1 tbsp finely chopped coriander (dhania) optional
1 tsp roasted sesame seeds (til)

For Serving With Buckwheat Khichdi

Method

For buckwheat khichdi

    For buckwheat khichdi
  1. To make buckwheat khichdi, clean, wash and soak the buckwheat in enough water for 2 hours. Drain and keep aside.
  2. Combine 1½ cups of water and curds in a deep bowl and whisk well. Keep aside.
  3. Heat the oil in a deep non-stick pan and add cumin seeds.
  4. When the seeds crackle, add the potatoes, mix well and cover and cook on a medium flame for 2 to 3 minutes or till the potatoes are half cooked, while stirring occasionally.
  5. Lower the flame, add the ginger-green chilli paste, buckwheat, curds-water mixture and rock salt, mix well and cover and cook on a slow flame for 5 to 6 minutes, while stirring occasionally.
  6. Add the peanuts and lemon juice, mix well and cook on a medium flame for 1 minute.
  7. Garnish buckwheat khichdi with coriander and sesame seeds and serve immediately with peanut kadhi.

Method for Buckwheat Khichdi

  1. To make the buckwheat khichdi (kuttu ki khichdi),  clean, wash and soak the buckwheat in enough water for 2 hours. Drain and keep aside.
  2. For the buttermilk (curd-water) mixture, combine 1½ cups of water and curds in a deep bowl and whisk well. Keep aside.
  3. Heat the oil in a deep non-stick pan and add cumin seeds.
  4. When the seeds crackle, add the potatoes, mix well.
  5. Cover and cook on a medium flame for 2 to 3 minutes. Make sure you stir it occasionally. Cook till the potatoes are half cooked.
  6. You will see them turning golden brown in color.
  7. Lower the flame, add the ginger-green chilli paste.
  8. Then add the soaked and drained buckwheat. Here are the health benefits of buckwheat.
  9. Finally, add the buttermilk(curds-water) mixture and mix well. While adding the buttermilk mixture, you might feel it is getting curdled but not to worry, it is just due to the sticky properties of buckwheat that has gone wrong.
  10. Add little sugar and rock salt and mix well. People normally use rock salt while fasting.
  11. Cover and cook on a slow flame for 5 to 6 minutes, while stirring occasionally. You have to cook it till all the liquid is evaporated.
  12. Add the roasted and coarsely powdered peanuts. They give a nice bite to the buckwheat khichdi (kuttu ki khichdi).
  13. Add little lemon juice, mix well and cook on a medium flame for 1 minute.
  14. Sprinkle with freshly chopped coriander on buckwheat khichdi (kuttu ki khichdi).
  15. Garnish buckwheat khichdi (kuttu ki khichdi) with sesame seeds. You can even skip adding this.
  16. Serve faraali kutto khichdi immediately with peanut kadhi.

Super food for endurance athletes. All you have to do is drop the potatoes and follow this recipe. As buck wheat is a whole grain, its very healthy. Consuming this will not lead to an insulin surge and your fat burning process will continue.

This recipe I tried this for auspicious shravan month. Everyone in my family liked it. This gives a filling effect, it is very tasty. My mother-in-law liked it very much. Actually it is very difficult for me to please her. Thanx to Tarlaji for giving such a nice recipe.
