Method

  1. To make vegetable dalia khichdi for babies and toddlers, heat the ghee in a pressure cooker and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, turmeric powder, broken wheat, rice and all the vegetables and sauté on a medium flame for 1 to 2 minutes.
  3. Add approx. ¾ cup of water, salt and pepper, mix well and pressure cook for 3 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Serve the vegetable dalia khichdi for babies and toddlers lukewarm with fresh curds.

    1. Dalia, also commonly known as bulgur wheat or broken wheat, is a protein rich cereal.     2. Add enough clean water and wash the dalia and rice. 
    3. Drain out the excess water using a strainer. 
    4. Keep the washed and drained dalia and rice aside.
    5. To temper Vegetable Dalia Khichdi for Babies and Toddlers, add ½ tsp of ghee into a pressure cooker and allow it to heat. 
    6. Add cumin seeds to it and let them crackle. Cumin seeds, also called as jeera in Hindi, are good for digestion. 
    7. When the seeds crackle, add asafoetida to it. If your little one doesn’t’ like the taste of asafoetida, then avoid it. 
    8. Immediately add little turmeric powder. 
    9. Follow it by the addition of washed dalia and rice. 
    10. Add the chopped capsicum. These are a good source of antioxidants to build your baby’s line of defense against infection. 
    11. Add some chopped spinach as well. These add colour as well as iron to build hemoglobin levels.  
    12. Add some chopped cauliflower too. You can definitely choose veggies according to what’s stocked up in your refrigerator. 
    13. Sauté all these ingredients on a medium flame for 1 to 2 minutes. This will help the masalas blend well with the dalia, rice and veggies. 
    14. Add ¾ cup of water for cooking Vegetable Bulgur Wheat Khichdi for Babies. 
    15. Add restricted quantity of salt. If you are cooking Dalia Khichdi for an infant (upto 1 year), avoid the addition of salt as it is not recommended by pediatrician. For kids above 1 year, add it in small amounts. 
    16. You can also add a pinch of black pepper powder for taste. 
    17. Mix well using a ladle. 
    18. Close the lid of the pressure cooker and allow the Vegetable Bulgur Wheat Khichdi for Babies to cook for 3 whistles. It may even take 4 whistles as bulgur wheat takes slightly longer time to cook well. Let the steam escape before opening the lid of the pressure cooker.

      1 1/2 tbsp peeled and grated bottle gourd (doodhi / lauki) 2 tbsp peeled and grated carrot
      2 tbsp rice (chawal) , washed and drained
      2 tbsp green moong dal (split green gram) , washed and drained
      1/2 tsp ghee
      1/4 tsp cumin seeds (jeera)
      a pinch of asafoetida (hing)
      clove (laung / lavang)
      black peppercorn (kalimirch)
      a pinch of turmeric powder (haldi)

      For Serving
      fresh curd , preferably made from cow's milk

      1. Heat the ghee in a pressure cooker and add the cumin seeds.
      2. When the seeds crackle, add the asafoetida, clove, peppercorn, bottle gourd, carrot, green moong dal, rice, turmeric powder and 1¼ cups of water, mix well and pressure cook for 3 whistles.
      3. Allow the steam to escape before opening the lid.
      4. When it is done, remove the peppercorn and clove. Mash the khichdi a little with the back of a spoon.
      5. Serve lukewarm with fresh curds.
       
Moong Dal Khichdi for Babies and Toddlers

      1 tbsp green moong dal (split green gram)
      1 tbsp rice (chawal)
      1/8 tsp turmeric powder (haldi)
      1/2 tsp ghee

       

      1. Wash and soak the green moong dal and rice in enough water for 15 minutes. Drain and keep aside.
      2. Combine the green moong dal, rice, turmeric powder and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
      3. Allow the steam to escape before opening the lid.
      4. Mash the khichdi very well using a potato masher.
      5. Add the ghee and mix well.
      6. Serve the moong dal khichdi for babies lukewarm.

      1/4 cup finely chopped cabbage
      2 tbsp green moong dal (split green gram) , washed and drained
      2 tbsp rice (chawal) , washed and drained
      1/2 tsp ghee
      1/4 tsp cumin seeds (jeera)
      a pinch of asafoetida (hing)
      a pinch of turmeric powder (haldi)
      restricted quantity of salt (optional)

      1. Combine the rice, moong dal and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
      2. Allow the steam to escape before opening the lid.
      3. Heat the ghee in a broad non-stick pan and add the cumin seeds.
      4. When the cumin seeds crackle, add the asafoetida and sauté on a medium flame for 5 seconds.
      5. Add the cabbage and sauté on a medium flame for 2 to 3 minutes or till the cabbage turns soft.
      6. Add the cooked dal-rice mixture, turmeric powder and salt, mix well and cook on a medium flame for 1 minute.
      7. Cool slightly and serve lukewarm.
