Ingredients

1 1/2 tbsp peeled and grated bottle gourd (doodhi / lauki)
2 tbsp peeled and grated carrot
2 tbsp rice (chawal) , washed and drained
2 tbsp green moong dal (split green gram) , washed and drained
1/2 tsp ghee
1/4 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
1 clove (laung / lavang)
1 black peppercorn (kalimirch)
a pinch of turmeric powder (haldi)

For Serving With Vegetable Khichdi For Babies and Toddlers
fresh curd (dahi) , preferably made from cow's
Method

  1. Heat the ghee in a pressure cooker and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, clove, peppercorn, bottle gourd, carrot, green moong dal, rice, turmeric powder and 1¼ cups of water, mix well and pressure cook for 3 whistles.
  3. Allow the steam to escape before opening the lid.
  4. When it is done, remove the peppercorn and clove. Mash the khichdi a little with the back of a spoon.
  5. Serve the vegetable khichdi for babies and toddlers lukewarm with fresh curds.

  2. Since the khichdi is for 8 to 12 months old babies, no salt has been added. Most pediatricians now-a-days do not recommend salt till the age of 1 year. Please consult your pediatrician before adding salt to this khichdi. 
  3. Before introducing this khichdi to your baby, ensure that you have tried a simple recipe like Rice Mash for Babies followed by Moong Dal Khichdi for Babies. Both the vegetables, carrot and bottle gourd, have also been introduced to your baby in some form. This is simply to prevent any allergies. 
  4. Begin with a small quantity and gradually increase the quantity.
  5. Feed your baby in a upright position to avoid choking.
  6. Do not show dislike towards any food, else babies are good imitators and they follow what they see easily. 
  7. Use colourful bowls and spoons for feeding. Colours appeal all babies. 
  8. Be patient while trying to feed a new food. It is quite likely that your baby may eat just a spoon of this khichdi or not eat at all. No worries. Try it again after 2 to 3 days.

First you need prepare the bottle gourd. Ensure that the bottle gourd has a smooth skin, is pale green in colour and free from any cuts, spots and blemishes. It should be firm to handle and the flesh should not feel soft when pressed.
  2. Wash the bottle gourd very well with clean water to make it free of dirt if any. Wash it under running water to prevent any sort of contamination.    
  3. Wipe it with a clean kitchen towel and pat dry it.  
  4. Cut the bottle gourd horizontally into 2 parts using a sterilized knife. 
  5. Peel the bottle gourd with a sterilized peeler and discard the peels. Peel it very well so that no green part remain as these are not easily digestible by babies at  8 months.  
  6. Using the sterilized grater, grate the bottle gourd. Keep the grated bottle gourd aside. 
  7. Then the next step to make Vegetable Khichdi for Babies and Toddlers ,is to buy the perfect carrot. Carrot should be firm, smooth, relatively straight and bright in color. Avoid carrots that are excessively cracked or bruised.  
  8. Wash the carrot very well with clean water to make it free of dirt if any. Wash it under running water to prevent any sort of contamination.  
  9. Wipe it with a clean kitchen towel. 
  10. Peel the carrot with a sterilized peeler. Peel it very well so that no fibrous part remain as these are not easily digestible by babies at 7 to 8 months.  
  11. Using the sterilized grater, grate the carrot. Keep the grated carrot aside. 
  12. For Soft Vegetable Khichdi for Infants and Toddlers, next combine the rice and green moong dal in a small bowl. 
  13. Wash the rice and moong dal with clean water. 
  14. Drain the excess water using a strainer and discard it.
  15. Transfer the washed rice and moong dal from the strainer into a bowl. Keep the washed and drained rice and moong dal aside. 
  16. Now to cook Vegetable Khichdi for Babies, take a clean pressure cooker. Add ghee to it and allow it to heat. 
  17. Add cumin seeds to it. These will aid in digestion in babies. Allow the cumin seeds to crackle. 
  18. Add a pinch of asafoetida, for digestion again. 
  19. Add 1 clove and 1 peppercorn. This is for an added flavour. You can avoid it if you wish to. 
  20. Add grated bottle gourd. 
  21. Add grated carrot. These add a dose of vitamin A. 
  22. Add washed and drained rice and moong dal mixture. 
  23. Add a pinch of turmeric powder for taste and colour both. 
  24. Add 1¼ cups of water for cooking Vegetable Khichdi for Babies and Toddlers.
  25. Mix well using a ladle. 
  26. Close the lid of the pressure cooker and pressure cook for 3 whistles. Let the steam escape before opening the lid. 
  27. Vegetable Khichdi for Babies will look like this after cooking. 
  28. Remove the clove and peppercorn from the khichdi, as that will lead to choking in babies. 
  29. Mash the Vegetable Khichdi for Babies and Toddlers, well using a potato masher. 
  30. Serve Vegetable Khichdi for Babies and Toddlers to your baby lukewarm with a bowl of curd. Prefer curd made with cow’s milk as that us more easily digestible than buffalo’s milk. For choice of milk and curd, always consult your pediatrician.

    1/4 cup finely chopped cabbage
    2 tbsp green moong dal (split green gram) , washed and drained
    2 tbsp rice (chawal) , washed and drained
    1/2 tsp ghee
    1/4 tsp cumin seeds (jeera)
    a pinch of asafoetida (hing)
    a pinch of turmeric powder (haldi)
    restricted quantity of salt

    1. To make cabbage moong dal khichdi for babies and toddlers, combine the rice, moong dal and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
    2. Allow the steam to escape before opening the lid.
    3. Heat the ghee in a broad non-stick pan and add the cumin seeds.
    4. When the cumin seeds crackle, add the asafoetida and sauté on a medium flame for 5 seconds.
    5. Add the cabbage and sauté on a medium flame for 2 to 3 minutes or till the cabbage turns soft.
    6. Add the cooked dal-rice mixture, turmeric powder and salt, mix well and cook on a medium flame for 1 minute.
    7. Cool the cabbage moong dal khichdi for babies and toddlers slightly and serve lukewarm.

    Method for vegetable dalia khichdi
    1. To make vegetable dalia khichdi for babies and toddlers, heat the ghee in a pressure cooker and add the cumin seeds.
    2. When the seeds crackle, add the asafoetida, turmeric powder, broken wheat, rice and all the vegetables and sauté on a medium flame for 1 to 2 minutes.
    3. Add approx. ¾ cup of water, salt and pepper, mix well and pressure cook for 3 whistles.
    4. Allow the steam to escape before opening the lid.
    5. Serve the vegetable dalia khichdi for babies and toddlers lukewarm with fresh curds.

    Handy tip: Broken wheat is also known as bulgur wheat.
