Notes on eggless healthy whole wheat bread rolls. 1. To make the dough for whole wheat masala bread rolls, in a small bowl, take yeast. We are using dry yeast for the French bread rolls. Active dry yeast has slightly bigger size of granule and needs to be hydrated before being used in the recipe. 2. Add 3 tbsp of warm water in the bowl. After 10 minutes, open the lid and you can see a frothy layer on top which indicates our yeast has been activated and is ready to use. For the masala- Heat the oil in a small non-stick pan, add the onions, garlic and green chillies and sauté on a medium flame for 1 minute.
- Add the coriander, turmeric powder, chilli powder and salt, mix well and cook on a medium flame for 1 minute.
- Keep aside to cool completely.
How to proceed- Combine the yeast and 3 tbsp of warm water in a small bowl, cover it with a lid and keep aside for 10 minutes.
- Combine the whole wheat flour, butter, salt, yeast mixture in a deep bowl and knead it into soft dough using approx. ¾ cup of warm water.
- Cover the dough with a damp muslin cloth and keep aside for 20 minutes or till the dough rises a little.
- Add the prepared masala and knead very well.
- Divide the dough into 9 equal portions and roll each portion into a ball and place it on the greased baking tray.
- Cover them with a damp muslin cloth and keep in a warm place for 30 minutes or till they rise well.
- Bake them in a pre-heated oven at 200°c (400°f) for 20 to 25 minutes. Brush the whole wheat masala bread rolls with melted butter and serve hot.

Do check once in between at 12-15 minutes, if they are starting to darken beyond what you prefer, place a piece of foil over the top and continue baking. Remove them from the oven.

Q. I used dry yeast and followed the same method to bloom the yeast. But my yeast did not bloom, there was no froth? Yeast needs lukewarm water, sugar and warm spot to activate. Make sure you use warm water and not hot water. Mix well after water is added and immediately cover and keep it in a warm spot. After the yeast is bloomed handle it gently, do not shake the yeast bowl vigorously or else it will kill the aeration.
