Method

For the paneer tikka
 

  1. Combine the paneer cubes, onion cubes, capsicum cubes and the marinade in a bowl and toss gently. Keep aside to marinate for 30 minutes.
  2. Heat a non-stick tava (griddle), grease it with oil and cook the marinated paneer-capsicum on a medium flame for 4 to 5 minutes. Keep aside.


How to proceed to make paneer tikka roll
 

  1. Combine the onions rings with chaat masala in a bowl, mix well and keep aside.
  2. Place a roti on a clean dry surface and put 1/4th portion of the marinated paneer tikka on side of the roti.
  3. Arrange ¼ cup of onion rings over it and roll it up tightly.
  4. Repeat with the remaining ingredients to make 3 more paneer tikka rolls.

For Roti of Paneer Tikka Wrap

 

    1. Take a deep bowl and add the flour to it to make roti for paneer kathi roll recipe | paneer tikka kati roll | paneer frankie | paneer tikka kathi wrap | We have used only whole wheat flour, but you can use half and half maida and whole wheat.     2. Add 1 tbsp of oil to this. This makes the roti soft.
    3. Also add the salt to taste. Increase or decrease the quantity of salt to your liking.
    4. Slowly add water little by little.
    5. Mix it well with your hands. Gather the flour from all sides and if its too floury, you will need more water.
    6. Knead it into a soft dough for at least 2 minutes. We have used approximately 1/3 cup of water.
    7. Apply a little oil on the surface of the dough so that it doesn’t become dry. Cover the dough with a wet muslin cloth. You can also use cling film or a plate to cover.
    8. Keep aside for 15 minutes. Giving rest to the dough improves the texture and the rotis will be softer and fluffier.
    9. Divide into 4 equal portions.
    10. Take a portion of the dough between your palm, flatten it and place it on a rolling board.
    11. Sprinke a little flour on your rolling board and roll out each portion of the dough into a thin circle of 225mm. (9”) diameter.
    12. Heat a non-stick tava (griddle) on a high flame and place the roti on it. Reduce the flame when it becomes hot enough.
    13. Cook till small blisters appear on the surface. Turn over the roti and cook for a few more seconds on a medium flame till light brown spots appear. Do not cook this on a slow flame, or else the roti will become too hard.
    14. Cook the roti using 1/4 tsp of oil on each side.
    15. Take the roti off the heat and repeat with the remaining dough portions to make 3 more rotis.
For The Paneer Tikka Marinade

 

    1. To begin making the paneer kathi roll | paneer tikka kati roll | paneer frankie | paneer tikka kathi wrap | we need to marinade the paneer tikka. For that, in a deep bowl, take thick curd. If you do not have thick curd, then take curd in a muslin cloth or a clean handkerchief, put it in a strainer and place over a bowl or hang it on a tap. Keep aside for about an hour and drain out excess water and you will get thick curd. If the climate is hot, put it in the refrigerator so, the curd does not turn sour
    2. Add the chilli powder. Also, you can take half and half Kashmiri red chilli powder and normal chilli powder to get a naturally bright red coloured tikka.
    3. Also, add the turmeric powder.
    4. Add the ginger - garlic paste.
    5. Add the besan. Besan helps in binding and coating the spices well to the paneer and vegetable cubes while marinating. Also, besan absorbs the moisture from curd making the marinade thick and creamy.
    6. Add the chaat masala. This can be substituted with lemon juice for tanginess.
    7. Add the dried fenugreek leaves. Before adding, we have lightly toasted the kasuri methi in a pan and we will crush it between the palm and then add to get maximum flavours from it.
    8. Add the garam masala. 
    9. Add salt to taste. Also, you can add a tsp of mustard oil for a unique flavour.
    10. Whisk well and our paneer tikka marinade is ready. Taste it once so, you can adjust the flavours according to your preference.
For Marinating The Paneer Tikka

    6. For cooking the paneer tikka on a stove top for the Paneer Tikka Kathi Roll, heat a broad non-stick (griddle) and grease it with oil.
    7. When the tawa is hot enough, place the marinated paneer- capsicum cubes on it. If you have bamboo skewers then you can thread the paneer-vegetable cubes and then cook the skewers on tava or you can also grill the paneer tikka in an oven.
    8. Cook on a medium flame for 4 to 5 minutes.

When I saute the marinated paneer and veggies it becomes watery and doesn''t roast like tikka. Any suggestions?

Hi Urvi, first thing you make sure your dahi is thick hung curd which will not release water.Other thing you can do is microwave them for 20 mins or saute the paneer cubes and capsicum-onion separetely Do try and let us know your feedback.
