  1. To make healthy schezwan chutney, boil enough water in a deep pan, add the whole dry kashmiri chillies and boil for 10 to 12 minutes until it becomes soft.
  2. Drain it well and allow it to cool slightly. Transfer the chillies into a mixer jar and blend into a coarse paste.
  3. Heat oil in a broad nonstick pan, add garlic, ginger and sauté for a few seconds.
  4. Add onions and sauté on a medium flame for 2 to 3 minutes.
  5. Add the chilli mixture, oats slurry, salt to taste and lemon juice.
  6. Mix well and cook on a medium flame for 2 to 3 minutes. Once cooked, cool it slightly.
  7. Store healthy schezwan chutney in an airtight container and use as require.

    11. Sauté for a few seconds.
    12. Add 1/3 cup finely chopped onions. Tiny onion pieces add a pleasing crunch and textural contrast to the chutney, making it more interesting to eat.
    13. Sauté on a medium flame for 2 to 3 minutes.
    14. Add the chilli mixture.
    15. Add the oats slurry. Oats slurry acts as a natural thickener for the chutney.
    16. Add salt to taste.
    17. Add 1 tsp lemon juice. Instead of lemon juice you can add little vinegar to make this recipe.
    18. Mix well and cook on a medium flame for 2 to 3 minutes. Once cooked, cool it slightly.

What could be the shelf life of this Scheuzuan sauce? Is it to be stored in a refrigerator?

Hi Vanita, it can stay for upto a month when refridgerated. Make sure you use a fresh dry spoon everytime you use the sauce.
