To make tahini dip, first make the tahini paste. For that, Roast the sesame seeds in a non-stick tava (griddle) on a medium flame for a few seconds. Allow it to cool completely, transfer to a bowl and add the olive oil, lemon juice, garlic and salt. Blend to a coarse paste. Keep aside. Then to make the dip, combine the curds and the prepared tahini paste in a bowl and mix well using a whisk. Serve the tahini dip chilled with pita bread or lavash.

For the tahini paste

For the thick curd for Tahini Dip

 

    1. Place a clean muslin cloth over a deep bowl and put the curd in the cloth.
    2. Bring all the edges of the muslin cloth together, tie a not and hang it over a sink or bowl for 20 minutes to remove some of the whey so that the curd becomes thicker.
    3. After 20 minutes, the curd will look like this.
    4. Put it in a bowl and whisk it till it is smooth and light. We need about 1 cup of whisked curd. Keep aside.
For the tahini dip

 

    1. Heat a broad non-stick pan and place the sesame seeds in it.
    2. Dry roast the sesame seeds for 1-2 minutes on a medium flame till they are slightly darker in color and start releasing a nutty aroma. Since the seeds heat up very fast, make sure to keep on stirring them to avoid burning.
    3. Transfer to a plate to cool completely.
    4. Transfer the cooled seeds to a small mixer jar.
    5. Then add the olive oil. These two ingredients are the basic ingredients for a tahini.
    6. Since this is a dip, we are also adding other flavors to complement this paste, like lemon juice.
    7. Then finally add the garlic and salt.
    8. Close the lid and blend this to a coarse paste. The coarse sesame seed paste brings out a different textural element that goes well with the smooth curd.     9. Once blended, add the tahini paste to the whisked curd.
    10. Mix this well till the entire paste is incorporated well with the curd.
    11. Spoon the Tahini Dip (Tahini Sauce) into a bowl.
    12. Garnish Tahini Dip with fresh parsley and refrigerate before serving. For all the flavors to really shine through, let the Tahini Dip sit in the refrigerator for atleast 30 minutes before serving.
    13. Serve Tahini Dip (Tahini Sauce) as a part of a Lebanese meal or as a dip with Lavash and Pita bread.

Madam, You have put up an easy & delicious recipe for Tahini sauce for a cup''s size quantity. That''s fine for a day or two without spoiling (in the fridge), I presume. However, Please let me know if I want to make say around 2-3 cups or more for use over 7-8 days, will it hold good or will it spoil, in spite of keeping in the fridge. Any need for any preservative?
