Ingredients
For Soya Chunks Pulao
1 cup brown rice
1/4 cup soy chunks (nuggets)
1/4 cup green peas
1/2 tsp cumin seeds (jeera)
1 stick of cinnamon (dalchini)
1/2 cup chopped onion
1/4 tsp turmeric powder (haldi)
1/4 tsp garam masala
1 tsp coriander (dhania) powder
1/2 cup chopped tomato
1 tsp oil
salt to taste
To Be Ground Into A Chilli-garlic Paste
Method
- To make soya chunks pulao, clean, wash and soak the rice for 10 minutes. Drain and keep aside.
- Combine the soya nuggets and salt with 1 cup of water and pressure cook for 2 whistles. Drain and keep aside.
- Heat the oil in a pressure cooker and add the cumin seeds, cinnamon, cloves, bay leaf and cardamom.
- When the seeds crackle, add the onions and prepared chilli-garlic paste and sauté till the onions turn golden brown.
- Add the turmeric powder, garam masala, coriander powder, tomatoes, rice, green peas, cooked soya nuggets and salt and sauté for another 2 minutes.
- Add 1 1/2 cups of hot water and pressure cook for 2 whistles.
- Serve the soya chunks pulao hot.

Put 1 cup brown rice in a deep bowl.

Add enough water to cover it.

Clean the rice. You can see the dirt and this will require to change the water 2 to 3 times.

Cleaned rice. Soak the rice for 10 minutes.

Drain.

Put 1 cup brown rice in a deep bowl.

In a pressure cooker put 1/4 cup soya chunks (nuggets).

Add 1 cup of water.

Pressure cook for 2 whistles.

Let the pressure cooker cool and then open the lid.

Drain.

Add 1 stick of cinnamon (dalchini).

Add 2 cloves (laung / lavang).

Add 1 bayleaf (tejpatta).

Add 1 cardamom (elaichi).

Add 1/2 cup chopped onions.

Add prepared chilli-garlic paste by grinding 3 garlic (lehsun) cloves with 3 whole red chillies.

Sauté till the onions turn golden brown.

Add 1/4 tsp turmeric powder (haldi).

Add 1/4 tsp garam masala.

Add 1 tsp coriander (dhania) powder.

Add 1/2 cup chopped tomatoes.

Add soaked brown rice.

Add 1/4 cup green peas.

Add cooked soya nuggets.

Add salt to taste. We added 3/4th tsp salt.

Sauté for another 2 minutes.

Add 1 1/2 cups of hot water.

Pressure cook for 2 whistles.

Cool and open the lid.
