For the tava pulao,- To make tava pulao , heat the butter on a large tava (griddle), add the cumin seeds.
- When the seeds crackle, add the chilli-garlic paste, mix well and sauté on a medium flame for 1 to 2 minutes.
- And the onions, mix well and sauté on a medium flame for another 1 to 2 minutes.
- Add the capsicum, mix well and sauté on a medium flame for 2 more minutes.
- Add the tomatoes, mix well and again cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Preferably use a potato masher to mash the vegetables lightly.
- Add the turmeric powder, salt, chilli powder, pav bhaji masala and 1/4 cup of water, mix welland cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the rice and green peas, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Serve the tava pulao immediately garnished with coriander.

For the Mumbai roadside tawa pulao recipe, we will first rinse the rice under running water until the starch runs out and you get clear water. This helps in preventing the rice grain from sticking to each other after cooking.

Soak ¾ cup of rice in enough water for 30 minutes.

Drain well.

Boil 4 cups of water in a deep pan.

Add the soaked and drained rice and salt to taste.

Add ½ tablespoon oil and mix well.

Cook on a medium flame for 8 to 10 minutes or till the rice are 95% cooked. This will give you 2 ½ cups after cooking. Do not overcook the rice or else they will turn soft and mushy.

Drain the water using a strainer. Also, you can refresh the rice with cold water to prevent further cooking.

Transfer to a plate and allow it to cool for 2 to 3 hours. The Tawa Pulao rice is cooked.

Just make sure to cover with a plate so that the top layer of rice doesn’t dry out.

For the Mumbai style tawa pulao recipe, we will now make the homemade red chilli-garlic paste. For that remove the stem from 12-15 chillies.

Soak the whole red chillies in enough hot water for atleast 30 minutes.

Drain the chillies.

Transfer the chillies to a small mixer grinder and add roughly chopped 1 tbsp of garlic.

Add approx. ¼ cup of water.

Blend in a mixer till smooth. Keep aside. This recipe makes around 0.5 cup of homemade chilli garlic paste.

For the Mumbai roadside tawa pulao recipe, heat the butter on a large tava (griddle). Tawa pulao as the name suggests makes use of a tava to make the Mumbai street style famous tawa pualo. If you do not have a tava then make use of a broad non-stick pan or kadhai. You can also make use of oil to make the pav bhaji pulao.

Add the tomatoes, mix well and again cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

Using a potato masher, mash the vegetables lightly.

Add the turmeric powder and salt. If your cooked rice is salted, adjust the quantity of salt accordingly.

Now add the chilli powder. Adjust the spice level to suit your tastebuds.

Add the pav bhaji masala. We have also posted a recipe to make homemade pav bhaji masala.

Furthermore, add ¼ cup of water.

Mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

Add the rice. Also, you can make use of leftover rice which actually gives the best result.

Mix gently with the help of two spoons and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. If you mix vigorously, the rice grains will break.

Garnish the tava pulao (Tawa Pulao) with fresh coriander.
