Ingredients

For Bulgur Wheat and Paneer Pulao
2 tbsp broken wheat (dalia) , washed and drained
1/4 cup paneer (cottage cheese) cubes , preferably made with cow’s
1/2 tsp ghee
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped carrot
restricted quantity of salt

For The Garnish
1 tsp finely chopped coriander (dhania)
Method

  1. To make, heat the ghee in a pressure cooker and add the cumin seeds.
  2. When the cumin seeds crackle, add the broken wheat and sauté on a medium flame for 1 to 2 minutes.
  3. Add the carrot, paneer, salt and ¾ cup of water, mix well and pressure cook for 2 to 3 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Garnish the bulgur wheat and paneer pulao with coriander and serve lukewarm.
