For whole wheat vegetable noodles- Heat the olive oil in a broad non-stick pan and add the garlic.
- Add the spring onions, carrots, cabbage corn, capsicum, bean sprouts and salt and sauté over a high flame for 3 to 4 minutes.
- Add the noodles and sauté for another 2 minutes.

This hakka noodles recipe is diabetic friendly so, we are making use of whole wheat hakka noodles instead of regular ones which are made with refined flour.

To boil gehun hakka noodles, boil enough water in a deep non-stick pan.

Add salt and mix well.

Once the water starts boiling, add the noodles.

Mix well and cook on a medium flame for 8 to 10 minutes or till they are cooked while stirring occasionally.

Remove from the flame and drain out all the excess water.

Pour some cold water on the noodles to stop further cooking.

Let all the water drain out and ensure that the noodles do not contain any moisture. Keep aside.

To make diabetic friendly veg noodles, heat the oil in a non-stick pan.

Once the oil is hot, add garlic. You can even toss in some ginger for zesty yet sweet and warm flavor.

Add spring onion whites and greens.
