Method

For papad mangodi ki sabzi
 

  1. To make papad mangodi ki sabzi, combine the curds, chilli powder, coriander powder, dried mango powder, turmeric powder and 1 cup of water in a deep bowl and mix well using a whisk. Keep aside.
  2. Heat 1 tbsp of oil in a pressure cooker, add the coarsely crushed mangodis and sauté on a medium flame for 2 to 3 minutes.
  3. Add 1 cup of water, mix well and pressure cook for 2 whistles.
  4. Allow the steam to escape before opening the lid. Keep aside.
  5. Heat the remaining 1 tbsp of oil in a deep non-stick pan, add the cumin seeds, mustard seeds and asafoetida and sauté on a medium flame for a few seconds.
  6. Remove from the flame, add the curds mixture, cooked mangodi and salt and mix well.
  7. Switch on the flame and cook on a medium flame for 2 minutes, while stirring occasionally.
  8. Add the papad, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  9. Serve papad mangodi ki sabzi immediately.

    2. You coarsely crush the mongodi to use in the methi mangodi sabji.

    1. In a deep bowl put 1 cup curds (dahi).
    2. Add 2 tsp chilli powder.
    3. Add 2 tsp coriander (dhania) powder.
    4. Add 1 tsp dried mango powder (amchur).
    5. Add 1/4 tsp turmeric powder (haldi).
    6. Add 1 cup of water.
    7. Mix well using a whisk ensuring to break all the lumps.
    8. Keep aside curd mixture.

    1. Heat 1 tbsp of oil in a pressure cooker.
    2. Add 1 cup coarsely crushed readymade moong dal mangodi.
    3. Sauté on a medium flame for 2 to 3 minutes.
    4. Add 1 cup of water.
    5. Mix well.
    6. Pressure cook for 2 whistles.
    7. Allow the steam to escape before opening the lid. Keep aside.

    1. Heat the remaining 1 tbsp of oil in a deep non-stick pan.
    2. Add 1 tsp cumin seeds (jeera).
    3. Add 1/2 tsp mustard seeds ( rai / sarson).
    4. Add a pinch of asafoetida (hing).
    5. Sauté on a medium flame for a few seconds.
    6. Remove from the flame, add the curds mixture.
    7. Add cooked mangodi.
    8. Add salt to taste. We added 1/2 tsp salt.
    9. Mix well.
    10. Switch on the flame and cook on a medium flame for 2 minutes, while stirring occasionally.
    11. Add 6 medium sized raw urad dal papads , broken into small pieces.
    12. Mix well.
    13. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    14. Serve immediately.

Papad mangodi subzi is a rajasthani version of the gujarati papad ki subzi .. It is spicy in taste with a little tanginess of the curds... The dahiwali papad ki subzi is just awesomee
