For broccoli, baby corn and zucchini salad- For the honey orange dressing, in a small bowl mix honey, orange juice, basil leaves or mint leaves, dried oregano, extra virgin olive oil, lemon juice, sea salt and black pepper.
- Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute.
- Add mushrooms, broccoli florets, baby corn, zucchini, capsicum and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Transfer in a deep bowl, cool completely.
- Add the lettuce.
- Cover with a cling wrap and chill in the fridge till serving.
- Just before serving add the prepared honey orange dressing and toss well.
- Serve mushroom, broccoli, baby corn and zucchini salad immediately.

Put your torn lettuce leaves in ice cold water for 10 minutes.

Drain or use a salad spinner to dry out your lettuce leaves.

In a small boel put 1 tsp honey.

Add 1 tbsp readymade orange juice.

Add 1 tbsp chopped basil leaves.
