Mixed vegetable handvo is a savoury cake which is very famous meal dish originated from Gujarat.
Some people make mixed vegetable handvo from stratch but here we have made the process quicker and easier by using readymade idli batter for preparing instant vegetable handvo. Authentically the batter for vegetable handvo is made with rice and urad dal just like dhokla.
A tempering of mustard and sesame seeds adds to the flavour and aroma of this tasty vegetable handvo. We have cooked the vegetable handvo in a tava and cut it into handy-sized pieces for easy serving.

For the handvo batter- Combine all the ingredients along with approx. 2 tbsp of water in a deep bowl and mix well. Keep aside.
How to proceed- To make mixed vegetable handvo , divide the handvo batter into 3 equal portions and keep aside.
- Heat 2 tsp of oil in a small non-stick pan, add ½ tsp of mustard seeds, ½ tsp of sesame seeds and a pinch of asafoetida and sauté on a medium flame for 30 seconds.
- Pour a portion of the prepared handvo batter and spread it evenly, cover with a lid and cook on a medium flame for 3 to 4 minutes or till it turns golden brown in colour.
- Turnover and again cover with a lid and cook on a medium flame for 3 to 4 minutes or till it turns golden brown in colour from the other side as well.
- Remove on a chopping board, cut the mixed vegetable handvo into 4 equal pieces.
- Repast steps 2 to 5 to make 2 more mixed vegetable handvos.
- Serve the mixed vegetable handvo immediately with green chutney.

To prepare mixed vegetable handvo batter, in a deep bowl take 2 cups of readymade idli batter. The authentic Gujarati handvo batter is made using rice and urad dal just like the dhokla batter and fermented at home. This being a quick tiffin treat, we are making use of readymade batter. You can also use readymade handvo flour if available.

Add grated bottle gourd. You can use zucchini as a replacement of bottle gourd. Trying using this moist vegetable to get a soft vegetable handvo.

Add grated carrot and spinach.

Add grated onions. You can even chop them finely to get that crunchy mouthfeel.

Add finely chopped coriander. You can add any veggies of your choice like grated beetroot, finely chopped tomatoes, bell pepper, capsicum etc. For a fibre-rich handvo, add green vegetables like fenugreek leaves or amaranth leaves.

Add sugar.

Add green chilli paste and garlic paste. We have used homemade paste which does not contain any preservatives. Jains or people preparing this handvo for breakfast can skip adding the garlic and onions.

Add salt to taste (readymade batter mostly consists of salt) and approx. 2 tbsp of water (add more or less depending upon the consistency of the batter). The readymade batter is fermented so, we are not using fruit salt in this recipe. But, if making batter from scratch then add a little fruit salt to get soft and fluffy vegetable handvo from inside.

Combine all the ingredients and mix well. Keep the instant vegetable handvo batter aside.

To prepare Gujarati mixed vegetable handvo, divide the handvo batter into 3 equal portions and keep aside. If you want a thicker or thinner vegetable handva then adjust the portion size.

Heat 2 tsp of oil in a small non-stick pan.

Once the oil is hot, add ½ tsp of mustard seeds.

Add ½ tsp of sesame seeds. They provide a nice crunchy and nutty mouthfeel to the Vegetable Handvo.

Add a pinch of asafoetida.

Mix well and sauté on a medium flame for 30 seconds.

Pour a portion of the prepared handvo batter and spread it evenly.

Cover with a lid and cook Gujarati style mixed vegetable handvo on a medium flame for 3 to 4 minutes or till it turns golden brown in colour. It is important to cook on medium to low flame to get a crispy base. Cooking on a high flame will result in burning and uncooked handvo. Turnover and press the vegetable handvo lightly.

Again cover the savoury vegetable cake with a lid and cook on a medium flame for 3 to 4 minutes or till it turns golden brown in colour from the other side as well. Check whether it is cooked or not by inserting a knife or toothpick in the centre. If it does not come out clean, cook the mixed vegetable handvo for a little longer.
