hari chutney for chaat is a chatpata Indian chutney made with the right mix of ingredients to be served with a variety of chaat recipes. Learn how to make green chutney for chaat.
To make green chutney for chaat, combine mint leaves, coriander, onion, lemon juice, sugar, green chillies and salt and grind to a smooth paste in a blender using very little water. Refrigerate and use as required.
Green chutney is probably the most favourite Indian accompaniment to any Indian snack or starter. This hari chutney for chaat has fresh herb flavour by way of mint and coriander. The addition of lemon juice enhances the flavours of mint and coriander and prevent discoloration of the greens.
The spiciness in this spicy coriander chutney for chaat is not only by the addition of green chillies but to some extent also because of the use of onions. The onions are also a store of antioxidants, thus enhancing the nutritional quotient of this chutney.
Chaats are considered incomplete without this spicy coriander chutney for chaat. You can use them to make your favourite delicacies like Bhel Puri, Mixed Sprouts Chaat and Samosa Kadhi Chaat. This chutney can also be served along side with dhoklas and kebabs.
Tips for green chutney for chaat. 1. While cleaning the greens like coriander and mint leaves, let the tender stems be. Do not discard them. 2. If you wish to, you can avoid the adding 1 tbsp of sugar or add a pinch to balance the sourness of lemon juice. 3. This chutney is best enjoyed when made fresh. However, it can be stored refrigerated for upto a week.

Ingredients
For Green Chutney
2 cups chopped mint leaves (phudina)
1 cup chopped coriander (dhania)
1 large sliced onions
1 to 2 tbsp lemon juice
1 tbsp sugar
4 to 6 green chilli
salt to taste
Method
For green chutney
To make green chutney, combine all the ingredients and grind to a smooth paste in a blender using very little water.
Refrigerate the green chutney and use as required.

Pick the leaves from the stems and discard the stems.

Wash the leaves thoroughly to remove any dirt and dust that might be on them.

Roughly chop the leaves to make it easier for blending. We will need around 2 cups of chopped mint leaves. Keep aside.

Take one fresh bunch of coriander.

Separate the leaves and the stems. We are only going to use the leaves and the soft stems.

Rinse the coriander leaves in water to remove any dirt that might be stuck to them.

Roughly chop the leaves for the green chutney. We will need approximately 1 cup of chopped coriander leaves for this chutney. Keep aside.

We have also added onion in this recipe to make it a little different. We have used 1/2 cup sliced onions, which can easily be made with 1 large onion.

Put the mint (pudina) leaves in a mixer jar.

Then add the coriander leaves.

Now add the onions. This will give a slight pungency to this tasty chutney.

Now add the lemon juice. This will help maintain the color of the chutney. If you don?t add lemon juice, the chutney will keep on getting darker.

Add the sugar to balance the flavor of the lemon. If you are a diabetic, then you can refer to our Low Calorie Green Chutney which is diabetic friendly.

Also add roughly chopped green chillies to the blender for spice. You can increase or reduce the chillies according to your preference.

Finally add salt to taste.

Add 1/4 cup water so that it is easily blended.

Blend into a smooth paste. You will have to stir it once or twice in between to get a smooth paste.
