Here is how you can transform one of the most common South Indian breakfast recipe – Idli, into an appetizing idli chilli party starter.

If you have some leftover idlis, cut them into cubes, sauté in oil and inject some Oriental style excitement into it, with vinegar, soya and other sauces, and chunky veggies too. Not just youngsters but adults too, are sure to enjoy this idli chilli.

Notes to make the perfect idli chilli recipe. 1. If you are making fresh batch of idlis, then refrigerate for at least half an hour so they consume less oil and do not stick to each other on frying. We have taken 7 medium sized idli which yeilds 2 cups. 2. For making the Idli Chilli recipe, cut the idli into cubes. Also, you can cut them into thick strips. 3. Sauté on a medium flame for 1 more minute. We want the vegetables to be crunchy and not brown or soft. Add the tomato ketchup and sugar. It provides a tangy, sweet flavour to the chilly idli recipe. 4. Mix gently so the sauces coat the Idli Chilli well. Do not cook for more time or else the idlis will turn soggy and not stay crispy.

Ingredients

For Idli Chilli
2 cups idli cubes
2 tsp red chilli sauce
3 1/2 tbsp oil
2 tsp finely chopped ginger (adrak)
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/2 cup onion cubes
1/2 cup capsicum cubes
2 tbsp tomato ketchup
1/2 tsp sugar
1 tsp vinegar
1 tsp soy sauce
salt to taste
2 tbsp finely chopped spring onions

For The Garnish
1 tbsp finely chopped spring onions
Method

  1. To make idli chilli, heat 2 tbsp of oil in a broad non-stick pan, add the idli and sauté on a medium flame for 3 to 4 minutes or till it turns light brown in colour. Keep aside.
  2. Heat the remaining 1½ tbsp oil in a broad non-stick pan, add the ginger, garlic and green chillies and sauté on a medium flame for a few seconds.
  3. Add the onions and sauté on a medium flame for 1 minute.
  4. Add the capsicum and sauté on a medium flame for 1 more minute.
  5. Add the tomato ketchup, sugar, vinegar, soya sauce, red chilli sauce and salt mix well and cook on a medium flame for 1 minute, while stirring continuously.
  6. Add the sautéed idlis and spring onions, mix gently and cook on a medium flame for 1 to 2 minutes, while tossing occasionally.
  7. Serve the idli chilli immediately garnished with spring onions.

Method for Idli Chilli

  6. Heat the remaining 1½ tbsp oil in the same broad non-stick pan.
  7. Add the ginger.
  8. Add the garlic.
  9. Add the green chillies. All the quantities can be adjusted as per your liking.
  10. Sauté on a medium flame for a few seconds.
  11. Add the onions. Instead of onions, you can make use of spring onion whites.
  12. Sauté on a medium flame for 1 minute.
  13. Add the capsicum. To make it more colourful, add bell peppers.
  14. Sauté on a medium flame for 1 more minute. We want the vegetables to be crunchy and not brown or soft. Add the tomato ketchup and sugar. It provides a tangy, sweet flavour to the chilly idli recipe.
  15. Add the vinegar.
  16. Add the soya sauce.
  17. Add the red chilli sauce and salt. Also, you can add chilli garlic sauce or schezwan sauce to make it more spicy.
  18. Mix well and cook on a medium flame for 1 minute, while stirring continuously.
  19. Add the sautéed idlis.
  20. Add the spring onions, mix gently so the sauces coat the Idli Chilli well. Do not cook for more time or else the idlis will turn soggy and not stay crispy.
  21. Cook on a medium flame for 1 to 2 minutes, while tossing occasionally and our Idli Chilli is ready.
  22. Serve the idli chilli | chilli idli | idli chilli fry | immediately garnished with spring onions.

I had some leftover idlis at my place, so i decided to make this recipe. It came out amazingly well. Also i dont like paneer, so i thought making it with idli will be a great idea. The sauces and the veggies add a great taste and crunch to these soft idlies. Loved it!
