Carrot Onion Soup is a hearty soup made with a unique combination of ingredients. What is so new about combining carrot and onions in healthy onion carrot soup ? Look a little further to discover that this lovely Indian onion carrot soup with herbs also features apples, which brings about a beautiful balance in both flavour and texture.
To make spiced onion carrot soup, heat very little olive oil in a pressure cooker and sauté onions in it. When done, add carrot, apple, salt and water and pressure cook for 3 whistles. Once the cooker cools down slightly, blend it in a mixer till smooth. Transfer to a broad pan and add some flavours to it by way of pepper powder, mixed herbs and salty. Also add some milk to it. Milk adds a dimension of richness to this awesome soup, while a seasoning of dried herbs gives it an aesthetic flavour. Finally boil for 3 minutes and the healthy soup is ready for serving.

Ingredients
Carrot Onion Soup
1 1/2 cups chopped carrot
3/4 cup roughly chopped onion
1 tsp olive oil
1/2 cup chopped apple
salt to taste
1/2 tsp dried mixed herbs
1/2 cup low fat milk , 99.7% fat-free
Method
- To make carrot onion soup, heat the oil pressure cooker on a medium flame and when hot, add the onions and sauté on a medium flame for 2 minutes.
- Add the carrot, apple, little salt and 1½ cups of water, mix well and pressure cook for 3 whistles.
- Allow the steam to escape before opening the lid.
- Cool slightly and blend in a mixer till smooth.
- Transfer the mixture into a deep non-stick pan, add the mixed herbs, milk, ½ cup of water, salt and pepper powder, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
- Serve the carrot onion soup hot.

Add roughly chopped onions to it. You need not worry about chopping them finely as we have to blend them eventually.

I tried this recipe but the soup was very bitter in taste. I followed the recipe exactly used the same measurements and timings. But finally the soup was so bitter and was inedible.

Made slight adjustments: used both olive oil and butter to saut? the onions. Substituted 1 1/2 cups plain water for chicken stock when adding to the onions, carrots and apples. Lastly didn''t use a pressure cooker allowed it to simmer on low heat for about 30 mins. Other than these changes followed the recipe, & the taste was fantastic!!! Suprising how filling this turned out to be!

Hi Krishta, If you do not have a pressure cooker, instead of pressure cooking it, you can cook it in a deep non-stick pan and cover it with a lid and cook.
