how to make the stock

    1. In a pressure cooker, add 1 cup roughly chopped onion. Onions play a crucial role in building the flavor base of your vegetable stock, which in turn enhances the overall taste of your tomato, cabbage, and bean soup.

    2. Add 1 cup roughly chopped potatoes. Potatoes release starch as they cook, which can thicken the stock and give it a richer, more velvety texture.

    3. Add 1 cup roughly chopped tomato. Tomatoes offer a subtle sweetness that balances the savory notes in the stock.

    4. Add 5 cups of water.

    5. Mix gently.

    6. Pressure cook for 3 whistles.

    7. Allow the steam to escape before opening the lid.

    8. Strain the water using a strainer and discard the vegetables. Keep aside.

how to proceed to make the soup

    1. Heat 2 tbsp oil in a deep non-stick pan.

    2. Add 1/2 cup finely chopped onion. When onions are sautéed in oil or butter at the beginning of the cooking process, they release their aromatic compounds. This creates a savory base note that underlies the entire soup's flavor profile.

    3. Sauté on a medium flame for 1 minute.

    4. Add ½ cup finely chopped cabbage

    5. Sauté on a medium flame for 1 minute.

    6. Add the prepared stock.

    7. Mix well and boil on a medium flame for 5 to 7 minutes.

    8. Add ¾ cup finely chopped tomatoes. Tomatoes are the star of the show, contributing their signature sweet and slightly acidic flavor. Finely chopping them ensures that this flavor is released and distributed evenly throughout the soup.

    9. Add 1 cup baked beans. Baked beans contribute additional protein and fiber to the soup, making it more filling and nutritious.

    10. Mix well and boil again for 8 to 10 minutes while stirring occasionally.

    11. Add salt to taste.  Canned baked beans can be high in sodium, so it's important to be mindful of the overall salt content of your soup. You might need to adjust the amount of salt you add separately.

    12. Add freshly ground black pepper powder to taste.

    13. Mix well.

pro tips to make tomato cabbage and bean soup

    1. Finely chopped vegetables cook more evenly and at the same rate. This ensures that all the vegetables in your soup are tender and have the same consistency, preventing some pieces from being overcooked while others are still crunchy.

    2. Baked beans often have a slightly sweet and tangy flavor due to the sauce they're cooked in (usually tomato-based with molasses or brown sugar). This can add a touch of sweetness and complexity to the soup's overall flavor profile.

    3. You can also experiment by adding paneer or chickpeas as a protein source to make this recipe.
