Tangy tomatoes, crunchy cabbage and baked beans come together with an aromatic and flavourful vegetable stock to create a truly delicious and satiating Indian cabbage and bean soup.
To make tomato cabbage and bean soup, first make the stock. For that combine all the ingredients in a pressure cooker along with 5 cups of water, mix gently and pressure cook for 3 whistles. Allow the steam to escape before opening the lid. Strain the water using a strainer and discard the vegetables. Keep aside. Then heat the oil in a deep non-stick pan and add the onions and sauté on a medium flame for 1 minute. Add the cabbage and sauté on a medium flame for 1 minute. Add the stock and boil on a medium flame for 5 to 7 minutes. Add the tomatoes and baked beans and boil again for 8 to 10 minutes while stirring occasionally. Add the salt and pepper and mix well. Serve hot.

Method
