So if you are following a vegetarian or gluten-free diet, make sure to read the packet carefully and buy accordingly. 2. Pour some cold water on the noodles to stop further cooking. This process is called refreshing. 3. Cooking on high heat cooks the vegetables faster and also helps in retaining their color and crunch. 4. We have added both sugar and honey to give a mildly sweet flavor to soba noodles. If you still wish to add some pungency or hotness to the Soba noodles, add a little black pepper powder, chili sauce, chili flakes, sriracha sauce or chilli powder.

For soba noodles- To make soba noodles, heat the oil in a deep non-stick pan, add the garlic, ginger and celery and sauté on a high flame for a few seconds.
- Add the onions, capsicum, carrot and red cabbage, mix well and cook on a high flame for 2 minutes, while stirring it continuously.
- Add the noodles, soy sauce, sugar, honey and salt, toss well on a high flame for 2 minutes, while stirring it continuously.
- Serve the soba noodles immediately garnished with black sesame seeds.

Before we begin making veg soba noodles recipe | Indian style soba noodles | eggless veg buckwheat noodles | we will boil the buckwheat noodles. Boil enough water in a deep non-stick pan.

Add 1 tsp of oil. This will prevent the noodles from sticking to each other while boiling.

Add salt and mix well.

Once the water starts boiling, add the soba noodles. Sometimes soba noodles that you get in the market are made with egg or a combination of wheat and buckwheat flour. So if you are following a vegetarian or gluten-free diet, make sure to read the packet carefully and buy accordingly.

Mix well and cook on a medium flame for 8 to 10 minutes or till they are cooked while stirring occasionally. Refer to package directions to cook soba noodles until tender.

Remove from the flame and drain out all the excess water.

Pour some cold water on the noodles to stop further cooking. This process is called refreshing.

Let all the water drain out and ensure that the noodles do not contain any moisture. Pour 1 tsp of oil over it.
