nachni roti recipe is made with 3 flours. Learn how to make ragi paratha.
We have used a combination of ragi flour, rice flour and wheat flour to make ragi roti.
You should be able to roll these nachni rotis comfortably with a little flour for dusting. Using whole wheat flour helps to easily roll the nachni roti. So dont skip that.
Method to make ragi roti is very easy. We have combined the flour with onions, carrots and spiced it up with roasted jeera, grated adrak, green chillies, curry leaves and coriander to make a dough.
Further, divide and roll into roti and cook on a non-stick tawa. Then cook the ragi roti on a tava till golden brown on both sides with a little oil. Serve nachni roti immediately.
Tips for how to make ragi roti. 1. Add roasted cumin seeds (jeera). NOTE. The jeera must be roasted as it will give you the perfect flavour. 2. Add 4 curry leaves (kadi patta) , roughly chopped. NOTE. The curry leaves must be chopped otherwise it will not get evenly mixed in the dough.

Ingredients
For Nachni Roti
1/2 cup ragi (nachni / red millet) flour
4 tbsp whole wheat flour (gehun ka atta)
1/2 cup rice flour (chawal ka atta)
2 tbsp finely chopped onion
2 tbsp grated carrot
1/4 tsp grated ginger (adrak)
2 tbsp finely chopped coriander (dhania)
1 tsp finely chopped green chillies
1 tsp roasted cumin seeds (jeera)
4 curry leaves (kadi patta) , roughly chopped
salt to taste
1 tsp oil for cooking

In a bowl put 1/2 cup ragi (nachni / red millet) flour.

Gradually add enough water to make a soft dough. We added 1/2 cip water and then 1 tablespoon water.

Knead into a soft dough.

In a bowl put 1/2 cup ragi (nachni / red millet) flour.

Roll a portion into 125 mm. (5”) diameter using a little whole wheat flour. Since we have used whole wheat flour in the dough the rolling becomes easy.

Heat a non-stick tava (griddle).

When the non stick tava is hot place the Ragi roti gently over it. If the pan is not hot the Ragi roti will become hard on one side.

Cook roti for 30 to 45 seconds on medium heat.

Flip over.

Then grease the top of the roti.

Flip over and cook the roti on the other side the same way.

Grease the paratha again.

Remeber to press down with a spatula while cooking the roti to get it evenly cooked.
