1 cup maize flour (makai ka atta)
1/2 cup grated cauliflower
1/2 cup finely chopped fenugreek leaves (methi) leaves
1/4 cup finely chopped coriander (dhania)
1/2 cup mashed potatoes
2 tsp oil
1 tsp finely chopped green chillies
salt to taste

what is corn and vegetable roti made of? maize vegetable roti is made from 1 cup maize flour (makai ka atta), 1/2 cup grated cauliflower, 1/2 cup finely chopped fenugreek (methi) leaves, 1/4 cup finely chopped coriander (dhania), 1/2 cup boiled , peeled and grated potatoes, 2 tsp oil, 1 tsp finely chopped green chillies and salt to taste. Sieve 1 cup maize flour (makai ka atta) and put it in a big bowl.

Add 1/2 cup grated cauliflower.

Add 1/2 cup finely chopped fenugreek (methi) leaves.

Add 1/4 cup finely chopped coriander (dhania).

Add 1/2 cup boiled , peeled and grated potatoes.

Add 2 tsp oil.
-
Add 1 tsp finely chopped green chillies.

Add salt to taste. We added 1/2 tsp salt.

Add enough warm water to make a soft dough. Gradually add the water when making the dough. We added 1 tbls water first and then added a further 3 tablespoons of warm water. Total 4 tablespoons of warm water. Warm water gives us good binding as we have used maize flour and it's easier to roll.

Knead into a soft dough.

Sieve 1 cup maize flour (makai ka atta) and put it in a big bowl.

To make corn and vegetable roti recipe | vegetable corn paratha | maize vegetable roti | divide the dough into 7 equal portions.

Dust the rolling board with a little maize flour.
-
Flatten the dough and dust it.
-
Roll gently.

Keep evening roti edges from the sides with your hands as it will avoid the roti from breaking.

Roll out each portion into a 125 mm. (5”) diameter roti, using a little maize flour for rolling.

Heat a non-stick tava (griddle) and grease it will little oil.

Place the roti gently on the tava.

Cook roti for 30 to 45 seconds on a medium flame.

Grease the top of the paratha with oil.

Flip over.
-
Cook the other side the same way and use a spatula to press down to cook paratha evenly.

Flip and cook till golden brown. Your paratha is ready.

Put vegetable corn paratha in a serving bowl.

Serve corn and vegetable roti | vegetable corn paratha | maize vegetable roti | hot.

Reduce fat bajra or wheat plz tell me?

Bajra has approx. 5 g of fat per 100 g whereas wheat has approx. 1.5 g fat per 100 g. However the quantum consumed and other nutrients are also to be considered while adding them to your diet.

You have mentioned 1 bajra roti to have more protein than 1 wheat roti while a bajra roti is much heavier. Wheat has more protein than bajra per 100 gram.

True, but Bajra rotis are usually thick when compared to wheat flour rotis / phulkas, so more the amount of flour used per roti and hence the higher protein content in bajra roti.

This roti is really delicious. The combination of maize flour with green leafy vegetables is very unique and delicious. Fenugreek leaves is not giving that bitter taste. It has a mild flavour. A little care is required while rolling otherwise the roti is just yumm!

Maize flour forms the base for the roti. Good healthy roti and i dropped the potato to make this a health recipe.

Due to my studies i cannot make out time to cook. I can make tea coffee n bread toast, but nothing more then this. My mother alway insist me to learn cooking. Now my marriage is fixed in Dec 2018. I started with making wheat chapati/ roti after going through this article. In first attempt I did soft rotis, but not exactly round. Happy with it. I think tarladalal.com is the perfect site to learn cooking. Will definitely try subzis, dosas, sandwiches and other recipes of Tarla mam.
