Main Recipe
For the stock
1 cup coconut milk (nariyal ka doodh)
4 cups water
1 small piece sliced ginger (adrak)
1 chopped lemon grass (hare chai ki patti)
1 small sliced onions
Other ingredients
1 cup sliced mushrooms (khumbh)
1/2 cup carrot juliennes
1/2 cup chopped spring onion greens
salt to taste
To serve
1 tbsp chopped coriander (dhania)
lemon wedge to serve
Method
- Combine all the ingredients for the stock in a pot and bring to a boil.
- Simmer for 20-30 minutes and strain. Discard the flavouring ingredients.
- Return to the pot and add the mushrooms, carrots, spring onions greens and salt and bring to a boil.
- Serve hot garnished with coriander leaves and lemon wedges.
