Follow this with 1 tbsp finely chopped garlic (lehsun) and 1 cup finely chopped onion, and sauté on medium flame for 2 to 3 minutes. Next, add 21​ cup chopped tomato, 21​ tbsp green chilli paste, and 1 tbsp ginger-garlic (adrak-lehsun) paste, and sauté for 2 minutes. This aromatic blend forms the depth of the gravy.

 

 

Final Simmering and Blending

 

The final stage involves combining all the main components. Add the vibrant spinach (palak) puree (1 cup), the pre-sautéed soya chunks, and salt to taste to the pan and mix well. To achieve the right consistency, add 1 cup hot waterand let the curry cook on medium flame for 4 to 5 minutes, stirring occasionally. This simmering time allows the soya chunks in spinach gravy to absorb the rich flavors and merge into a delicious curry.

For soya palak masala
 

  1. To make soya palak masala, combine the soya chunks, salt and add enough hot water together in a bowl.
  2. Keep aside to soak them for 10 to 12 minutes. Squeeze the soya chunks thoroughly and keep aside.
  3. Heat 1 tbsp oil in broad nonstick pan, add the soaked soya chunks, turmeric powder, chili powder and cumin coriander seeds powder.
  4. Sauté on medium flame for 3 to 4 minutes, while stirring occasionally.
  5. Heat remaining 2 tbsp oil in a deep pan, add bayleaf, cloves, cinnamon, garlic and onions, sauté on medium flame for 2 to 3 minutes.
  6. Add tomatoes, green chili paste and ginger garlic paste and sauté on medium flame for 2 minutes.
  7. Add the spinach puree, sautéed soya chunks and salt to taste and mix well.
  8. Add 1 cup hot water and cook on medium flame for 4 to 5 minutes, while stirring occasionally.
  9. Serve soya palak masala hot with roti or rice of your choice.

    19. Add the sautéed soya chunks.
    20. Add salt to taste.
    21. Mix well.
    22. Add 1 cup hot water.
    23. Cook on medium flame for 4 to 5 minutes, while stirring occasionally.
