Ingredients
For Quick Veg Spaghetti
2 1/2 cups cooked spaghetti
1 1/2 tbsp oil
1/2 cup finely chopped onion
1/2 tsp garlic (lehsun) paste
1/4 cup finely chopped capsicum
1 cup finely chopped tomato
1/2 cup boiled sweet corn kernels (makai ke dane)
1/4 cup tomato ketchup
1/2 tsp chilli powder
salt to taste
Method
For quick veg spaghetti
- To make quick veg spaghetti, heat the oil in a broad non-stick, add the onions and garlic paste and sauté on a medium flame for 1 to 2 minutes.
- Add the capsicum and sauté on a medium flame for 1 minute.
- Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the sweet corn, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the spaghetti, mix gently and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
How to pack quick veg spaghetti
- Allow the quick veg spaghetti to cool completely, and pack in an air-tight tiffin box.

To cook the spaghetti for the Quick Veg Spaghetti recipe , take a deep non-stick pan, boil enough water.

Add 1 tsp of oil. This is added so the spaghetti when cooked doesn’t stick to each other.

Add the salt.

Add the raw spaghetti. You can break it a little if you wish to.

Cook on a medium flame for 12 minutes. Stir it in between using a flat spoon or else the noodles will break.

Drain it well using a strainer. Keep around 2 tbsp of pasta water aside.

Refresh it with cold water. This is very important as it stops the cooking process.

Transfer to a plate.

Cover it with a lid so that the spaghetti does not dry up and keep aside.

Sauté on a medium flame for 1 to 2 minutes.

Add the capsicum. Even coloured capsicum can be used if you have at home. This gives a nice crunchiness to the Quick Spaghetti recipe.

Sauté on a medium flame for 1 minute.

Add the tomatoes. Use red and firm tomatoes and chop them finely using a sharp knife.

Add 2 tbsp of reserved pasta water. This is added so the tomatoes do not turn dry.

Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

Add the sweet corn. Make sure you have boiled the corn perfectly. It can be boiled in a microwave or on an open flame. Baby corn can also be used make sure you cut it diagonally and blanch them.

Add the tomato ketchup. You can also add chilli sauce if you wish to add spiciness.

Add the chilli powder.

Add the salt and mix well.

Cook on a medium flame for 1 to 2 minutes, while stirring in between.

Add the spaghetti.

Mix quick Indian style spaghetti gently using 2 flat spoons.

Cook quick Indian style spaghetti on a medium flame for 3 to 4 minutes, while stirring in between.

Spaghetti is a durum wheat product. Unlike maida chowmein noodles, spaghetti is not required washing in cold water after cook. Washing in cold water destroy a teste of pasta. For best result direct toss hot boiled pasta with ready sauce and serve .
