For The Date Pur?e
1/2 cup dates (khajur) , deseeded
For The Dough
1/2 cup soy flour
1/2 cup whole wheat flour (gehun ka atta)
1/2 cup low fat butter
2 tbsp sugar
Method
- To make soya date cookies, combine dates add 1 cup of water, in a broad pan.
- Bring to a boil and simmer for 10 to 12 minutes until the dates are fully mashed.
- Cool and blend them to make a smooth puree.
- Combine the wheat flour, soya flour, butter and sugar in a bowl using your fingertips till the mixture resembles bread crumbs.
- Add the cooled date purée and knead it into a soft dough.
- Cover with a plastic film and refrigerate for 15 minutes.
- Roll out into 9 diameter circle with (¼ inch) thickness and cut out cookies using a cookie cutter.
- Re-roll the scraps of dough to make more cookies and place them on a baking tray (line the cookie sheet with greased proof paper).
- Bake in a pre-heated oven at 180ºc (360ºf) for 15 minutes or till the cookies are golden brown.
- Cool and store the soya date cookies in an airtight container and use as require.
