Ingredients
For The Bread Koftas
4 bread slices , torn into pieces
2 tbsp finely chopped onion
1 1/2 tsp finely chopped green chillies
1 tbsp curd (dahi)
a pinch of baking soda
1 tsp garlic (lehsun) paste
salt to taste
oil for deep-frying
For The Rice
1 cup long grain rice (basmati chawal)
1 small stick cinnamon (dalchini)
salt to taste
For The Gravy
3 tbsp oil
1 small stick cinnamon (dalchini)
1/2 cup sliced onions
2 tsp ginger-garlic (adrak-lehsun) paste
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp turmeric powder (haldi)
1/2 cup sliced tomatoes
salt to taste
1/2 cup whisked curds (dahi)
1/4 cup boiled green peas
To Be Mixed Into A Curd Dressing
1/4 cup whisked curds (dahi)
2 tbsp finely chopped mint leaves (phudina) leaves
2 tbsp finely chopped coriander (dhania)
salt to taste
Method
- Combine all the remaining ingredients with 2 tsp of water in a deep bowl and mix till the mixture binds well.
- Divide the mixture into 12 equal portions and shape each portion into a round ball.
- Heat the oil in a deep non-stick kadhai and deep-fry, a few koftas at a time on a medium flame till they turn brown in colour from all the sides. Drain on an absorbent paper and keep aside.
- Heat the oil in a broad non-stick pan, add the cinnamon and cloves and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the ginger-garlic paste, chilli powder, coriander-cumin seeds powder and turmeric powder and sauté on a medium flame for 1 minute.
- Add the tomatoes and salt, mix well and cook on a medium flame for 3 to 4 minutes or till the tomatoes turn soft and the oil separates, while stirring occasionally.
- Lower the flame, add the curds, mix well and cook on a slow flame for 1 minute, while stirring continuously.
- Add the green peas, mix well and cook on a medium flame for 1 minute, while stirring continuously. Keep aside.
- Soak the rice in enough water in a deep bowl for 15 minutes. Drain well and keep aside.
- Boil 2 cups of water in a deep non-stick pan, add the bayleaf, cinnamon, cardamom, cloves, rice and salt, mix well and cook on a medium flame for 8 to 10 minutes or till the rice is well cooked and all the moisture has evaporated, while stirring occasionally. Keep aside.
- Put the rice in a greased microwave-safe bowl and spread it evenly.
- Pour the prepared gravy over it and spread it evenly.
- Arrange the koftas over the gravy at regular intervals and press them lightly.
- Finally top it with the prepared curd dressing evenly over it.
- Cover it with a microwave-safe lid and microwave on high for 2 minutes.
- Serve immediately.

I love bread koftas and combining it with this biryani was awesome. The gravy is really quick and the most important thing is it does not require any exotic ingredient. Just made with the common ingredients which is easily available at home. After microwaving it, the tastes of all the layers blend really well into one another. The curd dressing gives a nice twist in the taste from koftas and gravy. Wonderful..

I was pretty excited about the turn up of kofta in biryani, when I read the recipe. But was frankly disappointed with the koftas. It ( bread) gives a messy texture and odd taste in between the rice. My husband even refused to eat it, becoz it looked like meat! The rice was good like the regular veg biryani I do.

Hi Krupa..Apologies for the delay in response. While making the koftas, it is very important to mix it really well to get the proper binding and round and smooth koftas. If this step is not correctly done, the koftas may not come out that well. This may be the reason for the messy koftas. However, we have now updated the recipe with the proper look and do images. You can give it a try once again and let us know about your experience.

i never thought that making a Biryani could be that easy... i always indulged in making those long recipe Biryanis which got me to a point where i even stopped think of making them... but after making this one... i can gladly say I LOVE MAKING BIRYANI and eating it too...
