Hyderabadi veg biryani recipe | Indian veg biryani | vegetable biryani has always stood the test of time be it for a Sunday culinary spread or an Indian party. Learn how to make Indian veg biryani.

To make the rice for Hyderabadi veg biryani, combine 4½ cups of water, bayleaf, cinnamon, clove, cardamom, rice and salt in a deep non-stick pan, mix well and cover with a lid and cook on a medium flame for 10 minutes or till the rice is cooked. Strain the rice using a strainer and keep aside. For the vegetable gravy, heat the oil in a non-stick kadhai and add the cumin seeds. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent. Add the ginger-green chilli paste, turmeric powder, coriander powder, chilli powder and garam masala and sauté on a medium flame for a few seconds. Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 4 to 5 minutes. Add the mixed vegetables, paneer, salt and milk, mix well and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally. Add the sugar, mix well and cook on a medium flame for 1 more minute.

Then to make Indian veg biryani, combine the curds, coriander and saffron colour in a bowl and mix well. Add the prepared rice, mix well and divide into 2 equal portions. Put a portion of the rice in a handi and spread it evenly with the back of a spoon. Add the prepared vegetable gravy on it and spread it evenly. Top it with the 2nd portion of the rice and spread it evenly. Pour the ghee evenly over it and cover it with a lid. Place the handi on a non-stick tava (griddle) and cook on a slow flame for 25 to 30 minutes. Serve hot.

Biryani is an everlasting relic of the Moghul era that continues to live and breathe in innumerable restaurants and kitchens across the globe. Not only that, this traditional recipe has stood the test of time by being constantly adapted to suit the tastes of each generation. While many modern versions of this spice-filled rice preparation are made in the oven or microwave, here is an authentic Indian veg biryani that retains the original handi cooked magic.

Layers of aromatic saffron coloured rice and delicious vegetable gravy are topped with a generous quantity of ghee and simmered on the stove till the aroma multiplies and wafts out, to fill the room and the hearts of the diners! Enjoy vegetable biryani hot and fresh, with a raita or a white-gravy based side dish like paneer in white gravy.

For the rice
 

  1. Combine 4½ cups of water, bayleaf, cinnamon, clove, cardamom, rice and salt in a deep non-stick pan, mix well and cover with a lid and cook on a medium flame for 10 minutes or till the rice is cooked.
  2. Strain the rice using a strainer and keep aside.


For the vegetable gravy
 

  1. Heat the oil in a non-stick kadhai and add the cumin seeds.
  2. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.
  3. Add the ginger-green chilli paste, turmeric powder, coriander powder, chilli powder and garam masala and sauté on a medium flame for a few seconds.
  4. Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 4 to 5 minutes.
  5. Add the mixed vegetables, paneer, salt and milk, mix well and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.
  6. Add the sugar, mix well and cook on a medium flame for 1 more minute.


How to proceed
 

  1. Combine the curds, coriander and saffron colour in a bowl and mix well.
  2. Add the prepared rice, mix well and divide into 2 equal portions.
  3. Put a portion of the rice in a handi and spread it evenly with the back of a spoon.
  4. Add the prepared vegetable gravy on it and spread it evenly.
  5. Top it with the 2nd portion of the rice and spread it evenly.
  6. Pour the ghee evenly over it and cover it with a lid.
  7. Place the handi on a non-stick tava (griddle) and cook on a slow flame for 25 to 30 minutes.
  8. Serve hot.

    1. Hyderabadi veg biryani recipe | Indian veg biryani | vegetable biryani, is made of cheap and easily available ingredients in India:
      For The Rice: 1 1/2 cups long grained rice (basmati), soaked and drained, 1 bayleaf (tejpatta), 25 mm (1“) stick cinnamon (dalchini), 1 clove (laung/lavang), 1 cardamom (elaichi) and salt to taste. See the below list of image of ingredients for Hyderabadi biryani.

for the rice

 

    1. To make rice for Hyderabadi veg biryani recipe | Indian veg biryani | vegetable biryani, add 4½ cups of water in a deep non- stick pan.
    2. Add 1 bayleaf (tejpatta).
    3. Add 25 mm (1“) stick cinnamon (dalchini).
    4. Add 1 cloves (laung / lavang).
    5. Add 1 cardamom (elaichi).
    6. Add 1 1/2 cups long grained rice (basmati) , soaked and drained.
    7. Add salt.
    8. Mix well.
    9. Cover with a lid and cook on a medium flame for 10 minutes or till the rice is cooked.
    10. Strain the rice using a strainer, discard the water and keep aside.
    11. Transfer the rice into a big plate to cool.
for the vegetable gravy

 

    1. Heat 2 tbsp oil in a non-stick kadhai.
    2. Add 1/2 tsp cumin seeds (jeera).
    3. When the seeds crackle, add 3/4 cup finely chopped onions.
    4. Sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.
    5. Add ginger-green chilli paste.
    6. Add 1/4 tsp turmeric powder (haldi).
    7. Add 2 tsp coriander (dhania) powder.
    8. Add 1 tsp chilli powder.
    9. Add 1/2 tsp garam masala.
    10. Sauté on a medium flame for a few seconds.
    11. Add 1 cup roughly chopped tomatoes.
    12. Add 2 tbsp of water.
    13. Mix well and cook on a medium flame for 4 to 5 minutes.
    14. Add 1 1/2 cups boiled mixed vegetables (carrots , peas , cauliflower , french beans , potatoes) cubes.
    15. Add 1/4 cup paneer (cottage cheese) cubes.
    16. Add salt to taste.
    17. Add 1/4 cup milk.
    18. Mix well and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.
    19. Add a pinch of sugar.
    20. Mix well and cook on a medium flame for 1 more minute.

    2. Add ¼ cup finely chopped coriander (dhania).
    3. Add a few drops of edible saffron colour.
    4. Mix well.
    5. Add the prepared rice.
    6. Mix well.

    8. Put a portion of the rice in a handi.
    9. Spread it evenly with the back of a spoon.

    11. Spread it evenly.
