The zucchini is cooked here with tomatoes, onions and a splash of everyday Indian spice powders, to get an awesome dish with a desi flavour.

Method
  1. Heat the oil in a broad non-stick pan, add the cumin seeds, garlic and onion and sauté on a medium flame for 1 minute.
  2. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  3. Add the chilli powder, turmeric powder, coriander powder and 2 tbsp of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add the zucchini, garam masala and salt, mix well, cover with a lid and cook on a medium flame for 8 minutes, while stirring occasionally.
  5. Serve hot.

This was so delicious and aromatic. Zucchini can tend towards the bitter end of the spectrum when sauteed but with these spices and the tomato it swings more to the sweet side. My new favorite way to prepare zucchini. Doesn''t need any adjustments. Thanks for the recipe.
