Gujarati gathiya sabji is a traditional Kathiyawadi dish made using gathiya (thick besan sev). Kathiawar being a dry and arid region the availability of fresh vegetables remained limited and hence food preparations using sun-dried foods and farsan/snacks.

Gathiya nu shaak or Sev Bhaji whatever you like to call it, but it’s a very addictive dish and due to its quick and easy preparation it fits really well with working moms. Although this Kathiyawadi Gathiya Nu Shaak fits well into any Gujarati menu as the Gujaratis simply love ganthias!

For gathiya nu shaak
 

  1. To make gathiya nu shaak, in a deep bowl, combine curd, turmeric powder, chilli powder, whisk well. Add 2 cups of water, whisk well and keep aside.
  2. Heat the oil in a non-stick kadhai and add the cumin seeds, mustard seeds, curry leaves and dry chillies. Sauté for few seconds.
  3. Add the onion and sauté on medium flame for 2 minutes, while stirring occasionally.
  4. Add the ginger garlic paste and sauté for few seconds.
  5. Add the tomatoes and sauté for a minute. Add the curd mixture, salt to taste.
  6. Mix well and cook on medium flame for 3 to 4 minutes.
  7. Just before serving, add the ganthia and mix well.
  8. Serve the gathiya nu shaak hot garnished with coriander.

  1. Ganthia is a crisp, deep-fried snack made from spiced besan paste. It is readily available in the market.

    1. In a bowl put 3/4 cup curds (dahi). Curds add a tangy and refreshing flavor to the gathiya nu shaak.  Curds help to thicken the gathiya nu shaak, making it more saucy and less dry.
    2. Add ½ tsp turmeric powder. 
    3. Add ½ tsp chilli powder.
    4. Whisk well.
    5. Add 2 cups of water.
    6. Whisk well and keep aside.
    7. Heat 2 tsp oil in a non-stick kadhai.
    8. Add ½ tsp cumin seeds.
    9. Add 1 tsp mustard seeds.
    10. Add 2 dry pandi chillies
    11. Add 5 to 6 curry leaves.
    12. Sauté for few seconds.
    13. Add ½ cup finely chopped onions. Onions add a bit of crunch and texture to the dish. Onions add a savory flavor to the dish.
    14. Sauté on medium flame for 2 minutes, while stirring occasionally.
    15. Add ½ tbsp ginger (adrak) garlic (lehsun) paste.
    16. Sauté for few seconds.
    17. Add ¼ cup chopped tomatoes.
    18. Sauté for a minute.
    19. Add the curd mixture.
    20. Add salt to taste.
    21. Mix well.
    22. Cook on medium flame for 3 to 4 minutes.
    23. Just before serving, add 2 cups ganthia and mix well.
    24. Serve Gujarati gathiya sabji hot garnished with coriander.

I''ve tried making chutney using the skin only .Was the skin. Place frying pan on stove and when its heated pour oil. Put in the sliced ginger and fry for 2-3 minutes before adding 2-3 green chilies and some curry leaves. Let it cook until its soft.Pour some tumeric juice into the coconut together with the cooked item and blend it to a thick paste. Add salt only when you want to consume. Shall last for a few days if kept in fridge.
