Ingredients
For Banana Salad
2 cups roughly chopped bananas
a few drops lemon juice
1/2 cup peeled and roughly chopped cucumber
1/2 tbsp finely chopped dill leaves
1 tbsp roasted and coarsely crushed peanuts
1/2 tsp finely chopped green chillies
salt to taste
For The Dressing
1/2 cup fresh curd (dahi) , whisked
1/4 cup finely chopped mint leaves (phudina)
1 tsp honey
salt to taste
For The Garnish
1 tbsp roasted and coarsely crushed peanuts
1/2 tbsp finely chopped dill leaves

- what is banana salad made of ? Indian banana mint salad is made from 2 cups roughly chopped bananas, , whisked, 1/4 cup finely chopped fresh mint leaves (phudina), a few drops lemon juice, 1/2 cup peeled and roughly chopped cucumber, 1/2 tbsp finely chopped dill leaves, 1 tbsp roasted and coarsely crushed peanuts with a dressing of 3/4 cup fresh curds (dahi), fresh mint leaves (phudina), salt and peper to taste and 2 tsp sugar. Garnish of 1 tbsp roasted and coarsely crushed peanuts, 1/2 tbsp finely chopped dill leaves and 1/2 tsp finely chopped green chillies. See below image of list of ingredients for banana salad.

- In a bowl put 3/4 cup fresh curds (dahi) , whisked.
- Add 1/4 cup finely chopped fresh mint leaves (phudina).
- Add salt to taste.
- Add freshly ground black pepper to taste.
- Add 2 tsp sugar.
- Mix well.
- Keep aside. Curd mint dressing.

- Immediately add a few drops lemon juice.
- Mix banana with lemon juice. This will prevent the bananas from turning black.
- Add 1/2 cup peeled and roughly chopped cucumber.
- Add 1/2 tbsp finely chopped dill leaves.
- Add 1 tbsp roasted and coarsely crushed peanuts.
- Add salt to taste.
- Toss well.
- Cover with a cling wrap over a bowl and chill in fridge till you want to serve.
- Just before serving add the dressing.
- Toss banana salad | Indian banana mint salad | healthy banana peanut salad with curd dressing | well.
- Serve banana salad | Indian banana mint salad | healthy banana peanut salad with curd dressing | chilled garnished with peanuts, dill leaves and green chillies.

- Use bananas that are firm, yet ripe.
- Mix banana with lemon juice. This will prevent the bananas from turning black.

Banana, Cucumber combine very well with curds and dill to give a tasty salad. Crushed peanuts give a good crunch and lemon juice gives it the zest. Have this salad after a workout as bananas can be high in fat.
