aloo paratha recipe is a whole wheat aloo paratha which is a popular Punjabi breakfast recipe. So popular is whole wheat aloo parathas that I have it as a one-dish meal along with some curds and chopped onions.

Luscious whole wheat aloo parathas are stuffed with a succulent mixture of mashed potatoes flavoured perkily with green chillies, onions and all. A dash of amchur powder adds to the tanginess of the stuffing, making the Aloo Paratha a really tasty and satiating dish.

To make aloo paratha, first knead a semi-stiff dough. For stuffing, heat ghee in a pan add cumin seeds, add onions and green chillies which can be adjusted according to the preference, add mashed potatoes followed by red chillie powder, coriander for freshness and amchur powder for tanginess. Mix well and stuffing of aloo ka paratha is ready.

To proceed, divide dough, roll into a small roti. Roll a portion of the aloo paratha stuffing into a ball, place it in the centre of the rolled dough and pull all the sides together and get rid of excessive dough. Flatten it and roll into a paratha. Place it on a greased tava and cook the stuffed aloo paratha.

stuffed aloo paratha taste best when served hot with pickles/aachar and homemade curd, but they may also be carried in a dabba.

Method

For the dough
 

  1. Combine the whole wheat flour, ghee and salt in a bowl and mix well.
  2. Add enough water and knead into a semi-stiff dough. Keep aside.


For the aloo paratha stuffing
 

  1. Heat the ghee in a broad non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes.
  3. Add the green chillies, mix well and sauté on a medium flame for 1 minute.
  4. Add the potatoes, salt, chilli powder, coriander, dry mango powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  5. Divide the stuffing into 12 equal portions and keep aside.


How to proceed
 

  1. To make aloo paratha, divide the dough into 12 equal portions and roll a portion of the dough into a circle of of 100 mm. (4”) diameter circle.
  2. Place a little stuffing in the centre of the circle.
  3. Bring together all the sides in the centre and seal tightly.
  4. Roll again into a circle of 150 mm. (6”) diameter circle with a little flour.
  5. Heat a non-stick tava (griddle) and cook the paratha using a little ghee until golden brown spots appear on both the sides.
  6. Repeat with the remaining dough and stuffing to make 11 more aloo parathas.
  7. Serve the aloo parathas immediately with fresh curds.

Aloo Paratha, How To Make Aloo Paratha recipe with step by step photos

For the aloo paratha dough

 

    1. To make Aloo paratha recipe | stuffed aloo paratha | aloo ka paratha | Take whole wheat flour in a deep bowl.

    2. Add melted ghee.

    3. Add salt to taste.

    4. Add water as required and knead into a semi-stiff dough.

    5. Add some ghee.

    6. Punch and knead till smooth.

    7. Keep the kneaded dough aside.

Aloo Stuffing For the Alooo Paratha Recipe

 

    1. To make the stuffing for aloo paratha | Aloo paratha | aloo ka paratha | First heat melted ghee in a deep non-stick pan. If you wish you can add more ghee for taste. Once the ghee is hot, add the cumin seeds and let them crackle.

    2. Once the seeds crackle add the chopped onions. Sauté the onions for 2 minutes.

    3. Add chopped green chillies and sauté again for a minute.

    4. Add the boiled and mashed potatoes and salt to taste.

    5. Add chilli powder.

    6. Add chopped coriander.

    7. Add dry mango powder. If you don’t have dry mango powder you can add lemon juice.

    8. Mix well. The stuffing for aloo paratha | aloo paratha | aloo ka paratha | is ready.

How to proceed to make the the Aloo Paratha

 

    1. You can give various shapes to stuffed parathas. Like in Cauliflower and Paneer lifafa paratha. But, here I will show you how to make the regular round stuffed aloo paratha.

    2. Divide the stuffing into 12 equal portions.

    3. Divide the dough into 12 equal portions.

    4. Roll a portion of the dough into a circle of 100 mm. (4”) diameter circle using a little whole wheat flour for rolling.

    5. Roll a portion of the stuffing into a ball. Place it in the centre of the rolled dough and press lightly.

    6. Start pulling the sides to the centre. After pulling all the sides in the centre, pull off the extra dough. Seal tightly and flatten the stuffed dough.

    7. Start rolling with help of a little flour into a circle of 150 mm. (6”) diameter circle with a little whole wheat flour for rolling.

    8. Heat a non-stick tava (griddle), place the rolled stuffed aloo paratha over it.

    9. When lightly cooked, flip the paratha.

    10. Smear 1 tsp ghee over it. Let the aloo paratha cook.

    11. Again flip the aloo paratha and smear some more ghee over it and let it cook.

    12. Cook the Aloo paratha | stuffed aloo paratha | aloo ka paratha | on both sides till brown spots appear on both sides and is crisp. Repeat with the remaining dough and stuffing to make more parathas.

    13. Put on a plate.

    14. Serve aloo paratha hot with fresh homemade curds or lassi and pickle.

    15. Aloo parathas can be enjoyed for breakfastlunch as well as dinner. Instead of curds, stuffed parathas can also be enjoyed with a raitapickle or dal of your choice.

Aloo ka paratha is fried in oil and one tablespoon of oil consists of 120 calories.so ur figure is highly inaccurate. Aloo ka paratha has about 307-479 calories depending on size and how less oil u use.
