Ingredients

For Vegetable Pasta
1/4 cup chopped onions
1/4 cup chopped capsicum
1/4 cup blanched broccoli florets
1/4 cup blanched chopped carrot
1/2 cup chopped tomatoes
1 cup cooked whole wheat (gehun)
2 tsp whole wheat flour (gehun ka atta)
3/4 cup milk
2 tsp olive oil
2 tsp finely chopped garlic (lehsun)
1/2 tsp finely chopped green chillies
3 tbsp grated mozzarella cheese
salt to taste

    For vegetable pasta
  1. To make vegetable pasta, combine the milk and whole wheat flour in a bowl, mix well and keep aside.
  2. Heat the olive oil in a broad non-stick pan, add the garlic, onions and capsicum and sauté on a medium flame for 2 minutes.
  3. Add the broccoli, carrot, tomatoes and green chillies and sauté on a medium flame for 2 minutes.
  4. Add the fussili, cheese, milk-whole wheat flour mixture and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  5. Serve vegetable pasta immediately.

  1. Vegetable pasta is a healthy dish made with fusilli pasta and lots of veggies. If you want your kids to have healthy veggies without being cranky about it, this is a go to dish. For Cooking Fusilli Pasta

  1. For boiling the fusilli pasta perfectly, boil enough water in a large pan. If you use a small pan, the pasta will clump together on boiling.
  2. Cover the pan with a lid to make the water boil faster.
  3. Once the water boils vigorously, add salt. The salt will season the fusilli pasta as they cook, which will give you flavorful pasta. Also, the water when tasted should taste like sea water
  4. Add the pasta to the boiling water and stir once.
  5. Cook uncovered, stirring occasionally and gently until the pasta is tender. Cooking times may vary with the size and the thickness of the pasta. Very small pasta (like macaroni, fusilli, conchiglie, penne) may cook in 5 to 7 minutes. Larger shapes (like spaghetti, fettuccine, dried lasagne sheets) may require 10 to 12 minutes. Refer the package instructions to understand the exact cooking time.
  6. After 5 to 7 minutes, remove one pasta out of the water and keep it aside to cool a little. Bite into the pasta or break it with a fork to check if it's still hard in the center or if it's cooked as you like. For perfectly cooked pasta, cook until it's al dente, which means it is a little firm in the center.
  7. Immediately drain the cooked pasta into a sieve or colander.
  8. Transfer to a bowl of cold water or refresh under running water to prevent over cooking.
  9. Drain again and keep aside. If the pasta is not to be used immediately, add 1 tablespoon of olive oil to it and toss it. Though it makes difficult for pasta to absorb/coat the white sauce.

How to make Healthy Kids Vegetable Pasta

  1. To make Healthy Kids Vegetable Pasta, take the whole wheat flour in a bowl. Generally, refined flour is used as a thickening agent for pasta sauce but since this is a healthy pasta recipe, we will make use of atta.
  2. Add milk in the same bowl. 
  3. Mix well and keep aside. Ensure the mixture in lump-free so you get a smooth sauce on cooking.
  4. For making the vegetable pasta, heat the olive oil in a broad non-stick pan.
  5. Add the garlic.
  6. Add onions.
  7. Add capsicum.
  8. Sauté on a medium flame for 2 minutes. To make it more colorful and nutritious, you can add bell peppers.
  9. Add the broccoli. This is a very good way to make your kids eat vegetables which they generally dislike.
  10. Add the carrot. Also, you can add peas, french beans, baby corn, zucchini and mushroom in this healthy veg pasta recipe.
  11. Add tomatoes. It provides a tang to the pasta dish.
  12. Also, add green chillies. If your kid does not eat spicy food at all, skip adding the chillies.
  13. Sauté everything on a medium flame for 2 minutes.
  14. Add the fusilli.
  15. Add the cheese. This is totally optional but, obviously cheese enhances the flavour of  Healthy Vegetable Pasta. Mozzarella gives a stringy mouthfeel, whereas Parmesan is the authentic Italian cheese popularly added to pasta recipes.
  16. Add the milk-whole wheat flour mixture and salt. To perk up the flavour of Healthy Kids Vegetable Pasta, you can toss in a little chilli flakes, dried oregano, italian seasoning, black pepper powder or mixed dried herbs whatever is available
  17. Mix Healthy Kids Vegetable Pasta well and cook on a medium flame for 2 to 3 minutes, while stirring continuously. It is important to stir continuously to prevent the formation of lumps.
