For pasta in tomato sauce- To make pasta in tomato sauce, heat the butter in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the spring onion whites and sauté on a medium flame for 1 to 2 minutes.
- Add the fresh tomato pulp, chilli powder, tomato ketchup, ½ cup of water, salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the fusilli, herbs, fresh cream and spring onions greens, mix gently and cook on a medium flame for 1 minute.
How to pack pasta in tomato sauce- Cool the pasta in tomato sauce slightly and pack in a tiffin box topped with cheese.
Handy tip:- 4 medium tomatoes when blanched in water, peeled, deseeded, chopped and blended will give approx. 1 cup of tomato pulp.

Cover the pan with a lid to make the water boil faster.

Take 4-5 medium sized ripe, red tomatoes and rinse them. We have used regular Indian tomatoes but, you can also make use of Italian tomatoes or Roma tomatoes if available.

Scoop out and discard the eyes of the tomatoes using the tip of a sharp knife.

Make a criss-cross cut at the base of each tomato. The “X” cuts helps in easy removal of skin after blanching.

Put the tomatoes in boiling water for 3 to 4 minutes or until the skin separates from the tomatoes.

Using a slotted spoon remove the tomatoes from hot water. Immerse them in cold water for some time. Refreshing prevents overcooking of tomatoes due to internal cooking and helps in retaining the bright red colour after blending.

When the tomatoes are cooled, peel and discard the skin and seeds. Chop roughly on a chopping board.

Transfer the chopped tomatoes to a mixer jar.
