Ingredients

For The Dough
3/4 cup whole wheat flour (gehun ka atta)
salt to taste

For The Rajma and Spinach Mixture
1/4 cup rajma (kidney beans) , soaked overnight
salt to taste
2 tsp oil
2 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped onions
2 tbsp finely chopped capsicum
1/2 cup finely chopped tomatoes
1/2 cup shredded spinach (palak)
1/2 tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
6 tbsp grated processed cheese
3 tsp oil for cooking
Method

For the dough

  1. Combine the wheat flour and salt in a bowl and knead into a soft dough using enough water. Keep aside.

  1. Combine the rajma, little salt and enough water in a pressure cooker and pressure cook for 5 whistles. Drain well.
  2. Mash the rajma slightly using a potato masher. Keep aside.
  3. Heat the oil in a broad non-stick pan, add the garlic and onions and sauté on a medium flame for 1 minute.
  4. Add the capsicum and sauté on a medium flame for 1 minute.
  5. Add the tomatoes, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Add the spinach, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  7. Add the rajma mixture, chilli powder, cumin seeds powder and salt, mix well and cook on a medium flame for 1 minute. Keep aside.

  1. Divide the rajma and spinach mixture into 6 equal portions. Keep aside.
  2. Divide the dough into 6 equal portions.
  3. Roll a portion of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
  4. Place a portion of the rajma and spinach mixture on one half of the paratha, sprinkle 1 tbsp of cheese evenly over it and fold into a semi-circle.
  5. Fold again to get a triangle.
  6. Roll again lightly into a thick triangle, using a little whole wheat flour for rolling.
  7. Heat a non-stick tava (griddle) and cook the paratha, using ½ tsp of oil, till golden brown spots appear on both the sides.
  8. Repeat steps 3 to 7 to make 5 more parathas.
  9. Serve immediately.

This recipe is a great combo of rajma, spinach and cheese parathas. Though its a kids recipe, it will surely be loved by adults as well. I make this often for breakfast and my entire family loves it..
