    1. In a deep bowl put 1 1/2 cups whole wheat flour (gehun ka atta).
    2. Add salt to taste. We added 1/4 tsp salt.
    3. Add enough water to make a soft dough. We added 1/2 cup water and then a further 2 tablespoons water,
    4. Knead into a soft dough.

    1. Heat 1 tsp oil in a broad non-stick pan.
    2. Add 2 tsp cumin seeds (jeera).
    3. Sauté on a medium flame for a few seconds.
    4. Add 1 cup grated carrot.
    5. Add 1 cup boiled and coarsely crushed green peas.
    6. Add 2 tsp finely chopped green chillies.
    7. Add 1 tsp chaat masala.
    8. Add 2 tbsp finely chopped coriander (dhania).
    9. Add salt to taste. We added 3/4 tsp salt.
    10. Mix well.
    11. Cook on a medium flame for 2 minutes, while stirring occasionally.
    12. Add 1 1/2 tsp lemon juice.
    13. Mix well.
    14. Divide the stuffing into 4 equal portions and keep aside.

    1. Divide the dough into 8 equal portions.
    2. Flatten the dough on a rolling board and dust with flour.  
    3. Rotate the dough while rolling and use flour to prevent any sticking to the rolling pin. 
    4. Roll dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling. You will need to do that with the 7 remaining dough balls.
    5. Brush the edges of the rolled paratha with a little water.
    6. Place a dough circle on a flat, dry surface and spread a portion of the filling over it.
    7. Brush the edges of another paratha with water.
    8. Place the other dough circle over it and seal it.
    9. Use your fingers to seal the edges of the paratha.
    10. Press the centre of the stuffed paratha down also.

    2. Place the paratha gently on the tava.  
    3. Cook paratha for 30 to 45 seconds on a medium flame.  
    4. Grease the top of the paratha with oil. 
    5. Flip over. 
    6. Cook the other side the same way and use a spatula to press down to cook paratha evenly. 
    7. Flip and cook till golden brown. Your paratha is ready. 
    8. Cut into pieces.
    9. Put in a serving plate.
    10. Serve hot.

I am regularly having bakery Khari, biscuit, toast, but alway worried about the hygienic condition while making them at bakery. I alway prefer to have the food made at home. Now after my marriage, my wife makes tarla mam khari, biscuits, sev recipes for me. Sushila, my wife also makes butter chakli, muthais, fafda.... tastes great!!!

My Father in law is very much particular with his daily diet. Every morning breakfast before 7.00 am, lunch by 11.00 am and dinner at 7.30 pm Dinner. He alway ask for some snacks during the gap between lunch & dinner. from this collection Butter Murruku, Ribbon Sev, Baked Oats Puri, Whole Wheat Sweet Biscuits, Namak Para and khari I have made & stored in jar for him on our dinning table. He is enjoying them everyday during his evening tea time.
