3/4 cup whole wheat flour (gehun ka atta)
1/2 tsp oil
restricted quantity of salt

To Be Mixed Into A Stuffing
1/4 cup grated paneer (cottage cheese)
2 tbsp boiled and coarsely mashed green peas
1/4 cup grated carrot
2 tbsp grated beetroot
1 tbsp finely chopped coriander (dhania)
restricted quantity of salt

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
2 tsp ghee for cooking

For Serving With Paneer Vegetable Paratha
fresh curd (dahi)

For the dough

    For the dough
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Cover the dough with a lid and keep aside for 15 minutes.

  5. Bring together all the sides in the centre and seal tightly and roll out again into a circle of 150 mm. (6”) diameter, using a little whole wheat flour for rolling.
  6. Heat a non-stick tava (griddle) and cook the paratha, on a medium flame using ½ tsp of ghee, till golden brown spots appear on both the sides.
  7. Repeat steps 3 to 6 to make 3 more paneer vegetable parathas.
  8. Serve the paneer vegetable paratha lukewarm with fresh curds.

My sister in law has a very low spice tolerance and also she is a great health freak... therefore she loves to eat vegetables in abundance... so I made her these parathas... however with very little ghee... she loved it... so I guess this is a recipe for toddlers as well as we grown ups... well if you like the spice just add a few chopped green chillies..

Paneer goes well with green peas, carrot and beet to make a nutritious whole wheat paratha. My 5 & 10 years old daughters loved it.
