rajgira paneer paratha is a perfect main meal during fast. Learn how to make vrat ka paratha.

A sumptuous recipe that is sure to satiate you even on a fasting day! Here in vrat ka paratha, wholesome rajgira parathas are stuffed with a succulent mixture of grated paneer perked up with green chillies, lemon juice and coriander.

What makes this upvas ka paratha very appealing is that the rotis are made of a dough of rajgira flour and potatoes, which gives them a unique texture that is soft yet crisp.

To make rajgira paneer paratha, farali paratha, combine paneer, green chillies, lemon juice, powdered sugar, coriander and salt and mix well. Combine the rajgira flour, potatoes, pepper powder and rock salt in a bowl and knead into a semi-soft dough using enough water. Divide the dough into 8 equal portions. Roll out a portion of the dough into a 75 mm. (3”) diameter circle, using a little rajgira flour for rolling. Place a portion of the stuffing in the centre of the circle, bring the edges in the centre and seal tightly. Roll out again into a 100 mm. (4”) diameter circle, using a little rajgira flour for rolling. Heat a non-stick tava (griddle) and cook the paratha, using a little oil, till it turns golden brown in colour from both the sides. Serve hot with green chutney and fresh curds.

The use of lemon juice and sugar further adds slight tang and sweet flavours to the otherwise bland paneer. All this Navratri fasting recipe needs is green chutney as an accompaniment.

Tips for rajgira paneer paratha, farali paratha. 1. Add water to knead dough gradually, as even a slightly soft dough might make rolling difficult. 2. Rolling semi-soft rajgira dough is also slightly difficult. It needs a little practice. We suggest you roll with a thin rolling pin and with light pressure. 3. Use fresh paneer only, for best results and perfect smooth texture. 4. If you don’t have powdered sugar, grind the table sugar in a mixer and sieve it before use.

  1. rajgira paneer paratha, divide the stuffing into 8 equal portions and keep aside.
  2. Combine the rajgira flour, potatoes, pepper powder and rock salt in a bowl and knead into a semi-soft dough using enough water.

  5. Place a portion of the stuffing in the centre of the circle, bring the edges in the centre and seal tightly.
  6. Roll out again into a 100 mm. (4”) diameter circle, using a little rajgira flour for rolling.
  7. Heat a non-stick tava (griddle) and cook the paratha, using 1/2 tsp oil, till it turns golden brown in colour from both the sides.
  8. Repeat steps 4 to 7 to make 7 more parathas.
  9. Serve the rajgira paneer paratha hot with green chutney and fresh curds.

Stuffing for Rajgira Paneer Paratha

 

    1. To make the stuffing for rajgira paneer paratha | farali paratha recipe | vrat ka paratha | upvas ka paratha | Navratri fasting recipe | in a deep bowl put 1 cup thickly grated paneer.
    2. Add 2 teaspoons finely chopped green chillies.
    3. Add 1/2 teaspoon lemon juice.
    4. Add 1/2 teapoon powdered sugar. 
    5. Add 2 teaspoons finely chopped coriander. Coriander is optional as some people don't like to add it.
    6. Add rock salt to taste.
    7. Mix well.
    8. Divide the stuffing into 8 equal portions and keep aside.
For the dough of Rajgira Paneer Paratha

    2. Add 1/4 cup boiled, peeled and mashed potatoes.
    3. Add 1/4 teaspoon freshly ground pepper powder (kalimirch).
    4. Add rock salt (sendha namak) to taste.
    5. Mix well.
    6. Add enough water to knead into a dough.
    7. Knead into a semi soft dough.
    8. Divide dough into 8 equal portions. Remember that rajgira dough does not need any resting time so you can start making the rajgira paneer paratha | farali paratha recipe | vrat ka paratha | upvas ka paratha | Navratri fasting recipe | immediately.
Making the Rajgira Paneer Paratha

 

    1. Roll out a portion of the dough into a 75 mm. (3”) diameter circle, using a little rajgira flour for rolling.
    2. Place a portion of the stuffing in the centre of the circle.
    3. Bring the edges in the centre and seal tightly. Make sure the stuffing is covered nicely.
    4. Pat down into a circle. Rajgira is difficult to roll and you need some practise. 
    5. Use enough rajgira flour to roll the dough.
    6. Roll out again into a 100 mm. (4”) diameter circle, using a little rajgira flour for rolling. Roll with a light hand. If you need more rajgira flour to roll, then use it. 
    7. Heat a non-stick tava (griddle) and cook the paratha on one side. Place the paratha very gently on the tava to prevent it from breaking. Cook one side well as there are chances of one side breaking.
    8. Flip over and cook the other side.
    9. Add a little oil with a brush to the paratha.

No words for this faraal paratha recipe..I saw this recipe and just told my mom to make them the next day..I had them with potato subzi and curd..was a complete meal..
