Ingredients

Method

For the topping
 

  1. Heat the oil in a broad non-stick pan, add the mushrooms and tomatoes and sauté on a medium flame for 4 to 5 minutes.
  2. Add the chilli garlic sauce and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the cheese and oregano, mix well and cook on a medium flame for 1 minute.
  4. Divide the stuffing into 4 equal portions and keep aside.


How to proceed
 

  1. Place a toasted bread slice on a clean, dry surface, put 1 portion of the topping over it and spread it evenly.
  2. Repeat step 1 to make 3 more toasts.
  3. Serve immediately.

Chilled mushrooms and tomatoes sauteed in olive oil taste great. Healthy evening snack and easy to carry to work.

I am a huge fan of mushrooms.. The cheese and oregano are the main flavour enhancers in this toast..I would also add a little garlic in the oil to get the extra flavour..
