Stir-fried noodles flavoured with lemon rind and basil.

Ingredients

2 cups rice noodles
2 cloves of garlic (lehsun), crushed
2 red chillies or green chillies, finely chopped
1 onion, sliced
1 tomato , quatered thin
rind of two lemon
6 basil leaves
2 tsp soy sauce
1/2 tsp sugar
2 red or green peppers, chopped
2 tbsp oil
salt to taste
Method
    Method
  1. Heat the oil and add the garlic and chillies.
  2. Add the noodles, onions, tomato, lemon rind, basil leaves, soya sauce, sugar, salt and peppers.
  3. Stir well till the peppers soften slightly.
  4. Serve immediatly.

Tips
  1. Grate only the yellow of the lemon rind, avoiding the white pith which gives a bitter after taste.

The way to make these drunkardls noodles is pretty conventional, but its taste is as unconventional as its name! The lemon zest adds that typical flavour to the noodles, that adds to their texture. Goes well with most gravies too!
