Crispy Coconut Cookies recipe - How to make Crispy Coconut Cookies

Preparation Time:    Baking Time:  23 to 25 minutes   Baking Temperature:  180°C (360°F)   Cooking Time:    Total Time:     40Makes 40 cookies

Ingredients
1/2 cup desiccated coconut
3/4 cup plain flour (maida)
a pinch of salt
1/4 tsp baking powder
5 tbsp butter
1/2 cup powdered sugar
Method
    Method
  1. Combine the plain flour, salt and baking powder in a deep bowl, mix well and keep aside.
  2. Combine the butter and powdered sugar in a deep bowl and mix well with a help of a spatula till the mixture turns light and creamy.
  3. Add 2 tsp of water gradually and mix well using a spatula.
  4. Add the plain flour-baking powder mixture and mix well.
  5. Add the desiccated coconut and 2 tsp of water, mix well and keep aside.
  6. Shape the cookies into 25 mm. (1“) diameter thin circle and arrange them on a greased baking tray.
  7. Bake the cookies in a pre-heated oven at 180°c (360°f) for 18 to 20 minutes.
  8. Allow the cookies to cool completely.
  9. Serve or store in an air-tight container.

1) What''s maida? Never heard of it. 2) The cookie is both crisp AND chewy? I''m looking for a recipe for CRISP coconut cookies.

very yummy..made them today. we need to keep them how thick..pls mention without adding water to the coconut ..was still too soft to roll/ shape . they flattened out still more while baking...so..bottom burnt n top yet not fully done
