White pumpkin basundi is a delicious Indian desert recipe with grated white pumpkin boiled in milk with sugar and served chilled with almond flakes as topping.
Method- Boil the milk in a thick bottom vessel. After five minutes add the pumpkin after squeezing it lightly and continue boiling for 15 minutes or until pumpkin gets cooked.
- Add the sugar and boil for a few more minutes. Mix the cardamom and remove from heat. Take out in a serving bowl.
- Serve either at room temperature or chilled in the fridge. Sprinkle almond slices on top.
