Ingredients

For The Rice Noodles
1 packet of rice noodles
1 tsp oil
salt to taste

For The Sweet and Sour Sauce

(makes Approximately 1/2 Cup)
1 large sized tomato
2 tsp vinegar
1/4 tsp soy sauce
1/2 tsp chilli sauce
1 tsp sugar
1/2 tsp cornflour
salt to taste

Other Ingredients
1 tbsp olive oil or any other
1/2 cup sliced coloured capsicum (yellow , red and green)
1/2 cup sliced and blanched baby corn
1/2 cup paneer (cottagte cheese) cubes
1/2 cup chopped pineapple
1/4 cup bean sprouts
1 tsp finely chopped celery
salt to taste
Method

For the rice noodles

    For the rice noodles
  1. Boil 6 cups of water in a vessel.
  2. Remove from flame, add the rice noodles, cover with a lid and keep aside for 10-15 minutes.
  3. Drain the water and again dip into cold water in order to arrest any further cooking.
  4. Drain again and keep aside.

For the sweet and sour sauce

  1. Boil a vesselful of water, add the tomatoes and cook for 3-4 minutes. Remove from the flame and keep aside to cool.
  2. Remove the skin of the tomatoes and blend in a mixer to a smooth purée.
  3. Heat a non-stick pan, add the tomato purée and all the remaining ingredients and mix well.
  4. Cook on a medium flame for 8 to 10 minutes or till it becomes thick while stirring continuously. Keep aside.

  1. Heat the oil in a non-stick pan, add the capsicum, baby corn, paneer, pineapple and bean sprouts and sauté on a high flame for a few seconds while stirring continuously.
  2. Add the celery and salt, mix well and cook for another minute.
  3. Add the prepared sweet and sour sauce, toss well and cook for a few seconds.
  4. Serve immediately on the bed of rice noodles.

y only fo rkids these noodles are just so yummy that no one can resist..when i made it for d first time i made small portion but everyone liked it so much that it got over in no time. sweet and sour sauce excellent recipe!
