Sojana Data Posto recipe |  Dry Drumstick and Poppy Seeds Sabzi |

The Sojana Data Posto, a classic from Bengali cuisine, is a simple yet exquisite dry sabzi that celebrates the unique flavors of drumsticks and poppy seeds (khus-khus). This dish is a perfect example of how a few key ingredients can come together to create a rich, nutty, and incredibly satisfying vegetarian meal. The star of the show is the poppy seed paste, which imparts a creamy texture and a subtle, earthy flavor that beautifully complements the distinct taste of the drumsticks.

The preparation begins by creating the signature posto paste. To do this, poppy seeds are soaked in water for about 15 minutes, allowing them to soften. They are then blended into a smooth, thick paste. This step is crucial, as the paste forms the creamy, flavorful base of the entire dish. At the same time, the drumsticks are prepared by being boiled in salted water until they are tender and soft, a process that takes about 8 to 10 minutes. This pre-cooking step ensures that the drumsticks are cooked perfectly by the time they are added to the final dish.

Once the main ingredients are prepped, the cooking process is straightforward. Oil is heated in a pan, and a tempering of mustard seeds and whole dry Kashmiri red chillies is added to sizzle. This is followed by thinly sliced onions, which are sautéed until they turn translucent and sweet. The prepared poppy seed pasteis then added to the pan and sautéed for just a minute to cook out any raw flavor. This creates a fragrant base for the rest of the spices.

With the base established, the remaining spices are incorporated. Chilli powder, turmeric powder, and saltare mixed into the poppy seed paste, along with a little water. This mixture is cooked for a few minutes, allowing the spices to toast and the flavors to deepen. This step is important to ensure the final dish is well-balanced and the spices are fully bloomed. The consistency of this mixture should be a thick, aromatic paste that will cling to the drumsticks.

Finally, the pre-cooked drumsticks are added to the pan, along with a bit more water. The ingredients are gently mixed together, and the dish is cooked for another 3 minutes. The key is to stir occasionally to ensure the poppy seed mixture evenly coats each piece of drumstick, infusing it with its delicious flavor. This Sojana Data Posto is best served immediately after cooking, as its unique charm lies in its moist texture and rich aroma. Enjoying it with warm rotis or steamed rice makes for a wholesome and delightful Bengali meal.
